It’s a recipe so simple that it barely deserves to be called a recipe, but even so, it’s a snack that feels extra special. And it will only take you four ingredients and about fifteen minutes to make.

The dipping chocolate is incredibly simple and you only need your microwave to make it. Chocolate chips – semisweet, dark or milk chocolate all work fine – that you will melt with a touch of coconut oil. The coconut oil helps to give it that “magic shell” effect and helps the chocolate harden back up once you have dipped in the cold frozen banana.

It helps to use a fork or even two to dip the bananas without a big mess and then you can just line them up on a baking sheet and chill them until they are set up. You can keep them in the fridge or the freezer depending on the kind of texture you like, but either way, they have sure a delicious little snack to have on hand.

We used to buy these delicious little bites at the store but they can get pricey with everyone in the house being obsessed with them, so I figured I better start making them at home and save a little money.

These make the perfect fun breakfast, great afternoon snack, or delicious dessert and are a HUGE hit with everyone in my house!

Banana Ice Cream Chocolate Bites

Four ingredients, fifteen minutes, and some of the most glorious snacking you have ever done. With chocolate, peanut butter, and banana, tasty Banana Ice Cream Chocolate Bites are a heavenly treat.

Ingredients

  • 2-3 bananas, ripe but firm
  • 1/3 cup peanut (or any other nut or seed) butter

Chocolate Topping

  • 3/4 cup chocolate chips (or dark or white chocolate)
  • 1 teaspoon coconut oil
  • Flaky salt - optional

Instructions

  • Slice the bananas into 1/4 inch slices. Place half of the slices on a lined baking sheet and set aside the other half.
    Spoon about 1/2 teaspoon of peanut butter on top of each banana slice.
    When finished adding all the peanut butter, top with the other banana halves. Like little banana sandwiches.
    Note: Heat up the peanut butter in the microwave for about 30-45 seconds, this makes it easier to spread.
    Place in freezer for at least 30 minutes.
    Towards the end of that time melt the chocolate coating.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bites from the freezer.
    Take a spoon and pour the chocolate one the tops of each sandwich bite, allowing the chocolate to rundown the sides. You can coat the full bite with chocolate, but you will need more chocolate chips if you want to do this.
    Sprinkle with flaky salt if desired, then place the bites back in freezer to harden up, for about 15 minutes.
    After the 15 minutes, the bites are ready to eat or you can transfer the bites into a freezer safe storage container.
    Storage Tips: Store the ice cream bites in an airtight container in the freezer. They can be enjoyed straight from the freezer or allowed to sit at room temperature for a few minutes for a softer bite.
    Notes: You can also sprinkle on some other optional ingredients (after dipping into melted chocolate) like crushed nuts or cake decorating sprinkles to add some fun and festive colors.
