This Pineapple Coconut Protein Smoothie is a guilt free “indulgence” that is cool, creamy,  refreshing, and healthy! Tropical, creamy, and full of island vibes! Also loaded with flavor and a huge boost of vitamin C to give your immune system a nice boost.

It is made with frozen pineapple and coconut milk and even contains cauliflower for a boost in nutrition (I promise, you can’t taste it). Protein powder is a nice addition for those who are looking to increase their protein intake.

I recommend using frozen pineapple to get a thick smoothie bowl consistency. If you only have fresh pineapple on hand, you may use it but it will change the smoothie texture. I always like to have cauliflower in the freezer for smoothies, as it adds nutrients without changing the taste (that’s right – you cannot taste it). You can use pre-frozen cauliflower or you can make your own. I cut and then steam the  cauliflower in a steamer pot.

After steaming, let it cool to room temperature, then place it on a parchment-line baking sheet and pop it in the freezer. Once frozen, place the cauliflower in storage bags or a freezer friendly container then it is handy to toss into any smoothie or smoothie bowl for added nutrition.

Some other nutritious options to add to further boost the smoothie:

Spinach: is a great way to add extra nutrition, and you won’t be able to taste it. Just be aware spinach will change the color of your smoothie.
Ginger:  adds a tangy punch that I love!
Fresh mint leaves: customize the flavor profile with your favorite herbs!
Turmeric:  adds an earthy, peppery, flavor and pairs beautifully with the pineapple and coconut.  Start with just a little and add more to taste.
Hemp, chia or flax seeds: a tablespoon will add that much more fiber, protein and vitamins.
Protein powder: makes your smoothie more filling and meal like, by adding more protein to balance the macro nutrients. I like to use a big scoop of vanilla so it doesn’t alter the flavor.

Ingredients

  • 2 cups pineapple chunks, fresh or canned, frozen
  • 1 cup cauliflower - steamed then frozen
  • 1/2 cup coconut (or any) milk
  • 2 scoops protein or collagen peptides powder
  • 1/4 teaspoon turmeric - optional- added for color
  • Optional garnishes: pineapple wedges, coconut shreds

Instructions

  • Add all ingredients to your blender and blend until smooth and creamy.
    You will need to use the tamper to help the smoothie blend. If your blender doesn't have one, then add a bit more coconut milk. Be patient - it takes some time to get the smoothie thick, creamy and well combined.
    Once you have reached the desired consistency, pour the smoothie into two cups/glasses and add your favorite toppings. Shredded coconut is a great topping option for this recipe.
    Serve immediately.
