Almond Peppermint Freezer Fudge

This gorgeous healthy fudge combines tahini (sesame seed butter) and a few other goodies for a yummy, sweet, salty, sink-your-teeth-in treat.
With just a handful of ingredients, this freezer fudge is an easy treat or snack, to keep stashed away for …well, any reason!
You might be wondering why this is called freezer fudge.  Well the reason is that it really only has the same consistency as fudge when its frozen! I love that for many reasons but mainly because you can make a batch, throw it in the freezer, and it will stay good for months.  And of course it would never last months but you get what I mean. 🙂

This recipe is the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

Ingredients

  • 1 1/2 cups almonds
  • 1 cup dates, soaked for 30 minutes and drained
  • 1/2 cup tahini well stirred, (or any other nut butter)
  • 1/4 cup cocoa or cacao powder
  • 1/4 cup chocolate chips
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon peppermint extract

Optional Toppings

  • 1 candy cane, crushed
  • chocolate chips
  • course sea salt

Instructions

  • Place almonds in a food processor and process until broken down and crumbly. Add dates, tahini, cocoa powder, coconut oil and peppermint extract and continue to process until a smooth paste is formed.
    Add in chocolate chips and pulse a few time to combine.
    Press into a small pan (I used a 4 x 6 inch), or shape into that size on a cookie sheet.
    Sprinkle with any (or all) of the toppings suggestions - crushed candy cane, chocolate chips or a sprinkle of sea salt and freeze for at least one hour, slice into small cubes.
    Store in the freezer!
