With my busy schedule and the constant struggle to keep my diet healthy, healthy snack bars are what keep me going when I have to skip meals or don’t have time to make breakfast.
I’m picky when it comes to my protein bars, and it pains me to say that none of the pre-packaged ones have been able to live up to my standards. The point is, if I want a bar, I have to make a bar; and when I make a bar, it has to be just right. This means: soft, chewy, dense, chocolatey, nutritious, and filling. In other words, these bars.
So, skip the store bought protein bars and reach for one of these delish protein-rich bars instead! With only 8 ingredients and 20 minutes required you will be making a fresh batch of these homemade bars every week!

Everyone loves them! Kids and adults alike will be all over these nut and date protein bars! They are healthy enough for breakfast. Who doesn’t love starting their mornings with something yummy? These bars feature healthy and wholesome ingredients like nuts and dates and even pack in some protein!
This recipe is another one of the “bet you can’t eat just one”. It’s hard to eat just one of these protein bars. …Which makes sense, because they are so yummy. If you are anything like me, you will finish one square and then return to the pan for another sliver…and then another. Oh well, we can’t all be perfect!
But seriously, these healthy bars are a delicious and healthy snack that satisfies your sweet tooth and will give you all the energy you need to power through your day. So, gather your ingredients, roll up your sleeves and treat yourself to a guilt-free indulgence that you can feel good about sharing! Get ready to impress your friends and family with this sweet and salty delightful treat that’s sure to become a favorite!
I feel like the possibilities are endless when you are making them at home – add some of this and that (and by this and that I’m referring to chocolate, and chocolate) and BOOM! You have a perfect sweet (but not too sweet) snack to get you through those rough, perhaps hangry, points in the day.
Honestly, the mixture looks so good, I’m not sure how they even make it to the freezer as my family grabs them first. 🙂

Almond & Date Protein Bars
Ingredients
- 1 cup pecan halves or walnuts
- 1 cup almonds or cashews
- 1 cup dates, soaked 30 minutes and drained
- 1 cup desiccated coconut
- 1/3 cup cocoa powder
- 1/4 cup protein or collagen peptides powder
- 1/4 cup coconut oil, melted
- 1/4 cup almond butter
- 1/2 cup chocolate chips
- 2 teaspoons vanilla extract
Chocolate Drizzle
- 1/2 cup chocolate chips
- 1 teaspoon coconut oil
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place the nuts and dates in a food processor and pulse several times to "chop" them into a crumbly texture - a few larger pieces are a good thing - don't overmix!Transfer the mixture to a mixing bowl and stir in coconut, protein powder, melted coconut oil, cocoa, almond butter and vanilla extract. Gently stir in the chocolate chips.Transfer mixture to lined pan and spread evenly using a spatula or back of a spoon.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the bars from the pan using the parchment paper handles and cut into 8 bars or more smaller squares.Place on a parchment paper lined tray or dish and drizzle melted chocolate over them. Bars will start to melt around room temp due to the coconut oil, so they will need to be kept chilled to stay firm. Store in fridge for up to1 week or freezer for up to 3 months.
