Almond & Coconut Butter Stuffed Protein Dates
Ingredients
- 12 Medjool dates, pitted
- 1/4 cup almond butter
- 1/4 cup coconut butter, softened - store bought or homemade recipe link below in notes
- 1 scoop vanilla or unflavoured protein powder
- 1 teaspoon vanilla extract
- Pinch salt
Toppings Optional
- Shredded coconut
- Cacao nibs
- Drizzle melted dark chocolate
- Flaky sea salt
Instructions
- If you are going to make your own coconut butter, make this first so its ready when you wish to make the stuffed dates. Recipe link below in notes.Soften the coconut butter by placing the jar in a bowl of hot water for a few minutes.Slice dates lengthwise and remove pits if needed.In a bowl, mix the softened coconut butter, almond butter, protein powder, vanilla and salt until smooth.Spoon or pipe the almond, coconut protein filling into each date.Add toppings if desired.Chill in the fridge for 20–30 minutes to firm up.Store in an airtight container in the fridge for up to 1 week or freezer for up to 2 months.
