Ingredients

Strawberry Coconut Base

  • 3/4 cup coconut butter (softened) store bought or homemade recipe link below in notes
  • 1 cup rolled oats or oat flour
  • 1 scoop vanilla or unflavoured protein powder
  • 1/2 cup freeze-dried strawberries
  • 2-3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch sea salt
  • 1-2 tablespoons coconut milk (if needed for blending)

White Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil

 Optional Toppings

  • Crushed freeze-dried strawberries
  • Shredded coconut

Instructions

  • Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Soften the coconut butter by placing the jar in a bowl of warm water or give it a burst in the microwave.
    In a food processor, blend freeze-dried strawberries into a fine powder.
    Add oats, coconut butter, protein powder, maple syrup, vanilla, and salt. Blend until a thick dough forms. Add a little coconut milk if needed to help it come together.
    Press the mixture firmly and evenly into the lined pan. Smooth the top.

White Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Drizzle the white chocolate over the bars. Add optional toppings if desired.
    Refrigerate for at least 2 hours or until fully set.
    Slice into 8 bars or more smaller squares using a sharp knife.
    Store in an airtight container in the fridge for up to 1 week or freeze for up to 3 months.
    Best enjoyed chilled for that creamy, fudge-like texture.
