High Protein Cottage Cheese Breakfast Bowl
Ingredients
- 3/4 cup cottage cheese
- 1/3 cup thick Greek-style yogurt
- 2 tablespoons peanut butter
- 2 tablespoons honey or maple syrup (optional)
- 1 scoop protein or collagen peptides powder
- 1 teaspoon vanilla extract
Chocolate Topping
- 1/3 cup chocolate chips
- 2 teaspoons coconut oil
- 1/3 cup peanuts, roasted, salted, roughly chopped
Instructions
- Add the cottage cheese, yogurt, peanut butter, honey and protein powder to a food processor or high speed blender and blend until smooth and creamy. If the mixture seems too thick add a little milk, a tablespoon at a time and blend again until the desired consistence is reached. Spoon into 2 bowls and place in fridge while you make the chocolate topping.
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted spoon over the 2 bowls and sprinkle on the chopped peanuts.Refrigerate for about 30 minutes and enjoy! Store leftovers in the fridge in an airtight container, though I doubt there will be any.
