Frosted Dream Brownies

This is hands down, the BEST no bake brownie recipe EVER. I have been making these for years and they are always a crowd pleaser. Fudgy, moist, decadent, whole food based and healthy.
A healthier, raw version of your classic brownie recipes. They are made with plant-based ingredients that can be eaten raw as there are no eggs, butter or refined white flour in them.  
You need only 9 ingredients AND they are gluten free, dairy free, grain free, paleo, vegan, egg free and DELICIOUS.
So what we have here is no bake brownies made with minimal wholesome ingredients. Easy to make, fudgy, and topped with whipped chocolate frosting - a rich and decadent dessert or treat. They truly take standard brownies to the next level.
The recipe is very simple, only using a handful of wholefood ingredients but packed with healthy fats, fiber and protein and naturally sweetened with dates and maple syrup!
The fudginess of the homemade brownies is boosted by the BEST rich, creamy chocolate brownie frosting that is made from scratch!
And best of all, they are easy customizable. I like mine with chopped walnuts in the brownie base, but you can leave them out or add chocolate or white chocolate chips (or any number of other mix-ins).
Or add some colorful sprinkles on top to make them birthday brownies for someone special who prefers brownies to cake!
They are a healthy snack or dessert, perfect for kids and a great alternative to store-bought chocolate candy.
These “perfect treat” brownies are fudgy and sweet and the frosting adds such a wonderful flavour.
You could say they are a little bit (no, a whole lot) healthy and a whole lot of yumminess.

Ingredients

  • 1 cup almonds
  • 2 cups dates, soaked at least 30 minutes and drained
  • 1/2 cup walnuts
  • 1/2 cup cocoa powder
  • 1/2 cup coconut flour
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Chocolate Frosting

  • 1 cup almond butter
  • 1/2 cup cocoa powder
  • 1/3 cup maple syrup
  • 1/2 cup almond (or any) milk
  • 2 teaspoons vanilla extract

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place almonds into a food processer and process until broken down and crumbly. Add dates, cocoa powder, coconut flour, maple syrup and vanilla and continue to process until mixture is only just combined.
    Add in the walnuts and pulse a few time to break them up a little but be careful not to over process as you want the texture to still be chunky with larger pieces of walnuts to add texture variance and different sized “bits” in your brownies.
    Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the frosting.
     
     
     
     
     

Chocolate Frosting

  • Place all ingredients into a food processor and pulse 8-10 times, in 1-second increments, or until it is creamy and spreadable. If needed add more milk, a tablespoon at a time until you reach the desired consistency.
    You may have to stop the machine and scrape down the sides once or twice to make sure that everything is thoroughly mixed.
    Scoop out onto brownie base and spread out evenly with a spatula or back of a spoon. Refrigerate brownies for at least 2 hours, to set.
    Leftovers are good for up to 1 week in the fridge, or 3 months in the freezer.
    Notes:
    Storage and make ahead: You can make this healthy chocolate frosting recipe in advance, place it in an airtight jar, and keep it in the fridge. It should keep fresh up to 3 days. Be sure to let sit on the counter 30 minutes before you are ready to use and give it a stir before using.
