These 4-ingredient  Chocolate Banana Ice Cream Cups are literally melt in your mouth delicious. Eat from the freezer for an ice-creamy, treat or leave to defrost for a few minutes and they will become even more creamy, smooth and oozy!

For this recipe, we make our own chocolate cups which make a beautiful and delicious base for elegant and decadent desserts. Quick and easy to make, these cups are a versatile ingredient that you can customize and fill with your favorite ingredients but also personalize to different events, from birthdays to graduations to baby or bridal showers.

You can make these cups as little or as big as you would like, from cupcake-liner big to tiny candy cup-sized. I recommend either a medium size or small size as they are easier to handle and fill, plus smaller looks more elegant if you are making these for a dessert bar.

Use foil cups since they are a little sturdier, but, paper cups will also work. If making big cups, cut the wrapper with scissors so they are not as tall.

These chocolate cups make the best edible dessert cup! Why serve dessert in a dish that has to be washed when a delicious, edible option is so easy to make!

Once made, chocolate dessert cups take just minutes to assemble! Filling options are endless, from simple ice cream, fruits, whipped cream, all sorts of mousses and the list can go on.

The best thing is that you can make the chocolate cups days in advance, refrigerate and fill them only when needed.

What time is it when you normally feel the rumbling of a craving? Does it strike after dinner when you are sitting on the couch after a long day, and you have just realized that there’s nothing sweet in the house? Many after-hours ice cream runs have started this way!

Made with 100% clean eating ingredients. Each bite contains nothing but dark chocolate, which is lower in sugar than milk chocolate and rich in flavonoids, peanut butter for protein, banana for a heaping dose of antioxidants, and coconut oil, one of our favorite healthy substitutes for butter.

They are also incredibly easy to make. I melt the chocolate in a ziplock bag (fewer dishes to wash!) and pipe the chocolate into paper muffin liners then spread it up the sides with a spoon to make a gorgeous little chocolate cup.

Then I fill with creamy delicious banana ice cream infused with peanut butter.  Oh my! So good! Melt in your mouth delicious!

I love to plan ahead. So I always have banana’s frozen in the freezer- actually the moment you spot a banana getting too ripe on your counter, quick chop it into 3 pieces, pop it into a small container and freeze. This is a huge time saver for making smoothies, smoothie bowls, nice creams and more.

I can’t decide whether I prefer these bad boys straight from the freezer, or defrosted, soft and oozy. My way around this dilemma was to eat two. One straight away and one a few minutes later.

I suggest you do too, at least the first time, then you will know which you prefer. If you still can’t decide you will just have to eat two every-time like me.

Chocolate Banana Ice Cream Cups

Decadent yet healthy these frozen chocolate banana cups will impress guests and make for a delicious dessert!

Ingredients

Chocolate Cups

  • 1 1/2 cups chocolate chips ,or broken up chocolate bar
  • 1 1/2 tablespoons coconut oil

Banana Ice Cream Filling

  • 2-3 ripe bananas, sliced, frozen
  • 1/2 cup peanut (or any other nut or seed) butter

Topping

  • 1/4 cup mini chocolate chips
  • Fresh fruit, chopped

Instructions

Chocolate Cups

  • Place a silicone 12-muffin tray onto a medium, flat baking sheet. Or use paper muffin liners in a normal 12-hole muffin pan.
    Place the chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Place 1 teaspoon of melted chocolate into the base of the cupcake paper or silicone muffin cups. Using a silicon brush or back of a spoon, cover the base with chocolate. Use more melted chocolate to cover the sides with a thin layer of chocolate, pushing it up the sides to create a little cup.
    Place back in muffin pan after lining with chocolate.
    Place in freezer or fridge to set for about 30 minutes.

Banana Ice Cream Filling

  • Thaw bananas slightly then blend with peanut butter until smooth and creamy.
    Remove frozen chocolate cups from freezer but leave in muffin pan. Fill each cup with around 1 tablespoon of banana filling. Just divide up the ice cream between the 12 cups.
    Sprinkle with additional chocolate chips before the banana filling is frozen so they stick.
    Freeze until firm (1 - 2 hours)
    Remove from freezer. Peel the paper lining off of each dessert cup.
    Keep the chocolate cups frozen until ready to eat, and take them out of the freezer 5 minutes before serving.
