This has to be one of the best no bake brownie recipes EVER. I have been making these for years. Fudgy, decadent, moist, whole food based and healthy.

The recipe is very simple, only using a handful of wholefood ingredients but packed with healthy fats, fiber and protein and naturally sweetened with dates!
And best of all this recipe is easily customizable. I like mine with chopped walnuts in the brownie base, but you can leave them out or add chocolate or white chocolate chips (or any number of other mix-ins).

Almond & Strawberry Brownies
Ingredients
- 1 cup almonds or walnuts, raw or toasted
- 2 cups dates, soaked 30 minutes and drained
- 1/2 cup oats
- 1/2 cup almond (or any nut or seed) butter
- 1/4 cup desiccated coconut
- 1/4 cup cocoa powder
- 2 tablespoons coconut oil, melted
- 2 teaspoons vanilla extract
Chocolate Topping
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- 1 tablespoon almond butter
Toppings Optional
- 1 cup fresh strawberries, cut into quarters
- Chopped almonds
- Desiccated coconut
- Shaved or chopped dark chocolate
Instructions
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add the almonds and oats into the food processor and process until broken down and crumbly. Add dates, almond butter, coconut, cocoa, coconut oil and vanilla and continue to process to obtain a dough like mixture.Be careful not to over process as its nice to have texture variance and different sized “bits” in our brownies.Scoop mixture out into the lined pan and spread out evenly with a spatula or back of a spoon.Next melt the chocolate topping
Chocolate Topping
- Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted add the almond butter and stir until smooth.Pour the chocolate mixture over the top of the brownie slice and spread out evenly.Garnish with chopped almonds, coconut flakes and/or dark chocolate and freeze for at least 4hours.Remove from the freezer and cut into 12 bars or more smaller squares.Top with fresh strawberries and serve.Store in fridge for up to 1 week or freezer for up to 3 months.
