You can make these ahead of time as a breakfast or lunch/snack meal prep for the week. Simply double or triple the recipe.

Chocolate Overnight Oats With Magic Shell
Ingredients
- 1/2 cup rolled oats
- 1/2 cup milk - coconut, almond, hemp or cashew
- 1 tablespoon chia seeds
- 1 tablespoon cocoa powder
- 1 scoop protein or collagen powder
Chocolate Magic Shell
- 2 tablespoons chocolate chips
- 1 teaspoon coconut oil
Toppings Optional
- 1 tablespoon peanuts, roasted, crushed
- Fresh berries or other fruit
- Seeds like hemp for extra protein
- Dollop of whipped coconut cream – recipe below in notes
Instructions
- Add the oats, chia seeds, cocoa and protein powder to a medium bowl and mix well. Pour the milk into the bowl, then stir until everything is combined. Let sit for at least 5 minutes, to allow the oats and chia seeds to absorb some of the liquid. Then, mix again to incorporate the extra liquid sitting on top.Transfer the oatmeal to a jar or bowl, cover with a lid or plastic wrap then store in the fridge for at least 4 hours, preferably overnight. Stir again prior to serving, and adjust consistency if you need to by adding a splash or two more milk to thin to your preference.(Optional) sprinkle your nuts over the oatmeal if using.Lastly, melt chocolate magic shell.
Magic Shell Topping
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 10 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.When chocolate has melted and is smooth, pour over the oatmeal and refrigerate or freeze10 minutes to set.Crack your shell and enjoy!
