If there’s one thing that will make my knees weak, it’s carrot cake. I would take carrot cake any day over chocolate. Okay, so maybe not any day. I would still gladly accept chocolate any time.

But there’s just something about carrot cake.

This no bake recipe for healthy carrot walnut energy bars is an amazing option for a healthy any time snack or guilt-free dessert.

Is it a low calorie recipe? No. This carrot walnut bar is healthy in the sense that it’s highly nutritious. It’s not diet food (if there really is such a thing). There are no “empty calories” here.

Because it IS possible to make a much healthier version and enjoy the classic flavour and essence of traditional carrot cake without all the refined sugar and refined flour.

This recipe does just that, plus this one is really easy to make. This is a sweet treat that nourishes with a whole host of vitamins, minerals, antioxidants and fiber, all drawn from nuts and natural fruits – and carrots of course.

It’s moist, dense and full of flavor. So much flavor! Maybe it’s the carrots. Maybe it’s the walnuts or the coconut. Maybe it’s the sweet cinnamon-y flavour. Whatever it is, this is what carrot cake dreams are made of!

Carrots are great for your immune system with Vitamin C and A, even a little Vitamin K and some Vitamin B.  Walnuts contain protein and good fats including omega 3, yes please!

Also Vitamin E, another vitamin important for a good immune system, along with other minerals and vitamins. Coconut is delicious too, oh yay and is healthy! It has good minerals and fibre and best of all good fats as in medium-chain triglycerides (MCT) that give us ENERGY!

Spices like cinnamon are power houses that we can use to improve our health using their volatile oils, spices are packed with antioxidants and minerals!

Such a great way to enjoy the tastes of classic carrot cake without even turning on the oven! I’m totally hooked and I think you will be too.

And guess what, you don’t even have to turn on your oven!

These taste exactly like a soft and fluffy carrot cake but in a healthy snack bar form. Packed full of protein, fiber and with no added sugar, and even a dose of veggies too so it’s the perfect snack recipe to have on hand!

When I first made the recipe I had a feeling these bars would be good but they actually turned out way better than I expected. They immediately made their way to the top of my favorite recipes list the first time I made them.

I ALWAYS have a batch of homemade protein bars on hand, especially with all the snacking I tend to do. Whether it is between meetings, before a workout, or when I can’t last until dinner, homemade protein bars have been a savior!

I snack on them whenever I need a boost. They are super compact too, so I have no issues packing a couple in my bag to snack on during the day!

That’s because if I can make a ‘healthified version and enjoy the flavor and essence of carrot cake without all the refined sugar, refined flour and oil, I’m going to do just that.

Although, if I’m being completely honest, it’s very hard to stop at just one. I may have eaten two or three in one sitting. But who’s counting? Not me. 🙂

Carrot Walnut Energy Bars

There’s so much to love about this healthy, highly nutrient dense, and delicious carrot walnut energy bar recipe that you can enjoy for breakfast/dessert/snack. 
This carrot bar recipe is so versatile, if you would like a new power/bliss ball recipe, use this recipe but form into balls instead of making into bars and roll in shredded coconut.

Ingredients

  • 1 cup carrot, peeled and chopped into 1/2-inch chunks
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/2 cup desiccated coconut
  • 1/2 cup crystallized ginger, roughly chopped
  • 1/4 cup hemp hearts
  • 2 tablespoons coconut oil, melted
  • 1 tablespoon cinnamon

Instructions

  • Line an 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place carrot, almonds and walnuts in a food processor and process until broken down and crumbly. Add dates, and continue to process until a sticky dough has formed. Add coconut, ginger, hemp hearts, coconut oil and cinnamon and pulse a few times until combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your carrot cake bars.
    Scoop out the dough into lined pan and spread out evenly with a spatula or back of a spoon. Refrigerate until firm, about 30 minutes to 1 hour. Slice into 16 bars or more smaller squares to serve.
    Note: You can also roll this dough into balls straight from the food processor.
    These bars will keep in the refrigerator, in an airtight container, for at least a week or up to 3 months in the freezer.
