Walnut-Almond Fudge Bites

A super recipe for thick squares of rich, velvety fudge packed with delicious walnuts. This classic chocolate walnut fudge is incredibly delicious and (surprisingly!)totally fuss-free.
Chopped walnuts add the perfect nutty dimension and crunchy texture to this smooth fudge. It’s a foolproof recipe that is great for snacking or gift giving!

Ingredients

  • 1 cup chocolate chips
  • 1/2 cup almond butter
  • 1/2 cup almond flour
  • 1/2 cup walnuts, chopped
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract

Instructions

  • Line an 5 x7-inchloaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    Clear some space in the freezer for this pan - you will need it later.
    Place chocolate chips and coconut oil in medium dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted add almond butter and almond flour and stir until well combined. Fold in walnuts.
    Pour this mixture into the prepared loaf pan. Tap the pan to create an even layer.
    Transfer pan to freezer. Freeze for 40-60 minutes or until completely firm. Remove from freezer and slice into 18 cubes or squares.
    Store in the refrigerator, for up 2-3 weeks or freezer for 1-2 months. Very firm, but enjoyable straight out of the freezer. If preferred, thaw for 10 minutes.
