I kid you not, these may be my favorite energy bite recipe ever. And trust me, I’ve made plenty of energy bites over the years. Your snack rotation will soon include these banana-chia energy bites. Give them a try,  you won’t be disappointed.

They are perfect for a healthy breakfast on the go or post-workout energy bites to refuel with healthy carbs and plant-based protein, for the perfect on-the-go snack or dessert!

Loaded with crunchy chia seeds, chewy oats, protein-packed peanut butter, cozy cinnamon and an optional boost of protein powder if you’d like. Can I get a yum already?!

Keep them in your fridge or freezer for the perfect on-the-go snack or treat!

These banana energy bites are packed with omega-3 thanks to walnuts and chia seeds. Omega-3s are a wonderful fatty acid that’s essential for your brain, your heart and the immune system. A lot of people struggle to get enough omega-3s in their diet as we tend to not eat enough fish, walnuts, or veggies with that type of nutrient.

Another reason to love these energy bites? They are packed with protein thanks to peanut butter and protein powder and filled with nutrients these no bake energy bites are a must make sweet treat snack! While the protein powder is completely optional, I choose to use it to boost the protein in these energy bites and make them a great post-workout snack.

There are a few easy ways to make these banana chia energy bites your own.

Go nut free: instead of peanut butter use sunflower seed butter and omit the chopped walnuts (or add in extra chia seeds).

Try a new nut butter: I LOVE the flavor that peanut butter gives these energy bites (especially paired with banana) but you can always use your fav nut butter like almond butter or cashew butter instead.

Why should I make these energy bites?

In my opinion, having snacks at the ready is a non-negotiable requirement for a healthy life. These energy bites are so easy and make enough to have a quick snack at any time throughout the week! They are high in protein, fiber, healthy fats, and so many vitamins and nutrients. Plus, they taste like chocolate banana bread. What could be better than that?

Not only can they be made gluten free, they are made with unrefined sugar and no dairy if you prefer! They take literally less than 10 minutes to make. It’s too easy of a snack not to make!

Ingredients

  • 2 cups rolled oats
  • 1 small banana
  • 1/2 cup walnuts or pecans, raw or toasted
  • 1/2 cup desiccated coconut
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/2 cup dates, soaked 30 minutes and drained
  • 2 tablespoons chia seeds
  • 2 scoops (1 serving) protein or collagen powder - optional
  • 1 teaspoon ground cinnamon

Instructions

  • Add all ingredients (besides ingredients for the drizzle) to the bowl of a food processor and process until they are well combined and come together like cookie dough.
Be careful not to over process as its nice to have texture and different sized “bits” in your energy bites.
Use a cookie scoop, take spoonful’s of the dough and then roll into balls. You should get about 16-18 balls. Place on a baking sheet lined with parchment paper and place in the freezer for 30 minutes while you melt the chocolate drizzle.

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Drizzle over balls, then place back in the freezer for 10 minutes.
Refrigerate for up to 7 days in an airtight container or freezer for up to 3 months. Enjoy them straight from the freezer. If they are too hard, let them sit at room temp for 5-10 minutes.
