These bars are soft, chewy, sweet, and salty all at once, and taste just like a candy bar. So easy to throw together. You can also roll the dough into balls if you don’t wish to make them into bar form.
You can make these bars even healthier by adding a handful of nuts or seeds to add texture and nutrition. Even better, add a tablespoon of hemp or chia seeds or ground flaxseed.

Orange-Date Oat Bars
Ingredients
- 2 cups cashews, soaked 3+hours and drained
- 1 cup rolled oats
- 1 cup desiccated coconut
- 1/2 cup coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1 tablespoon cocoa powder
- 1 teaspoon vanilla extract
Middle Layer
- 2 cups dates
- 2 oranges, juice and zest
Instructions
- Soak dates in juice and zest of the 2 oranges for 30–50 minutes turning from time to time. Set aside.Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or you can use a 12 cavity silicon muffin pan.Bottom and Top Layer. Place the cashews in a food processor and process until broken down and crumbly. Add oats, coconut, coconut oil, honey and vanilla and process until well combined. Middle Layer. Blend the orange soaked dates until smooth and creamy.To assemble layers:Press half the cashew, oat, coconut mixture into the lined baking pan. Spread the middle layer (dates/oranges) on top of mixture.Freeze until a little firm and then place the remaining crust mixture on top. Freeze until firm, lift the cooled bars out of the tray and onto a chopping board. Cut into 10-12 bars or more smaller squares and they are ready to snack on!Store in fridge for up to 1 week or freezer for up to 3 months.
