These pecan pie granola bites are made with only a handful of whole-food based ingredients and you can enjoy them for breakfast, a healthy any time snack, or even dessert.

Ingredients

Base Crusts

  • 1 cup pecans, raw or roasted (or any other nut)
  • 1/2 cup dates, soaked 30 minutes and drained
  • 1/2 cup rolled oats
  • 1/2 cup desiccated coconut
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Filling

  • 1 1/2 cups Vanilla yogurt

Toppings

  • Sliced bananas
  • Toasted coconut
  • Cacao nibs  

Instructions

  • Line muffin tin with 10 cupcake liners or arrange 10 silicone cupcake liners on baking tray. For a mini version of these cups, you could use a silicone mini muffin tray.
    In the bowl of a food processor, pulse the pecans, oats and coconut into a coarse meal. Add the dates, honey and vanilla and process until the mixture is well combined and sticks together when pressed between your fingers.
    Be careful not to over process as its nice to have some texture variance and different sized ‘bits’ in your base crusts.
    Divide mixture into the 10 prepared muffin cups.  Press the mixture firmly into the bottom and sides to form little granola cups for the yogurt filling to sit in.
    Chill in the freezer for about 15 minutes.  Use a knife to gently remove granola cups from the muffin tin or gently peel off paper muffin liners. 
    To serve, fill each cup with vanilla yogurt and garnish with sliced bananas, toasted coconut, and cacao nibs, or your choice of toppings.
