Make sure to use a chocolate that contains at least 60% cocoa. If you use a chocolate with less than that,then the fudge will not fully firm up.Then you simple mix together thick Greek yogurt with the melted chocolate and presto, it will become INSTANT FUDGE.Then just scoop into balls or cut into small cubes and enjoy.

Ingredients
- 1 1/2 cups dark chocolate chips, 60% cocoa or higher see note below
- 3/4 cup thick Greek yogurt, plain
Toppings - optional
- Shaved chocolate
- Flaky sea salt
Instructions
- Line a 7 x 5-inch loaf pan with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Place chocolate chips in dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.While the chocolate is still hot, mix in the yogurt until no yogurt streaks remain and the mixture is uniform in color. If it has cooled, then when you add the yogurt, it will cause the chocolate to harden immediately which you don't want. Add in the yogurt and working quickly, stir with a spatula until the yogurt is fully and evenly incorporated. Your mixture should be uniform in color and no yogurt streaks should remain.Pour mixture into prepared loaf pan. Use your spatula to smooth and even the surface.Place fudge into the fridge to firm up. When fudge is set, cut into small pieces with a sharp knife.For an even firmer texture place fudge in the freezer for 10 minutes. Remove and enjoy.Store uneaten fudge in the fridge or freezer. If frozen let thaw for 15 minutes before eating.Recipe Notes:This recipe works best with dark chocolate that contains at least 60% cocoa.There are some dark chocolate brands that contain less than 60% and the fudge won't fully set if it is less than 60%.You likely also don't want a chocolate with 70% or higher because your fudge won't be sweet enough.
