Almond Butter Bars

These no bake bars are the perfect quick breakfast or afternoon snack. Healthy and delicious, keto and low carb. An easy recipe, these gluten-free bars are made without graham crackers.
Does everyone else love things like chocolate and almond butter as much as I do, or do I bore you lovely people with my incessant bombardment of chocolate and nut butter flavored snacks and desserts?
As you can probably tell, I can’t get enough of chocolate and nut butter. I eat it all the chances I can get and these delicious bars have become a staple dessert and snack and dare I say it….‘breakfast’ item. It’s dessert for breakfast, a little more guilt free…but definitely worth waking up for.
Almond and other nut butters are such a favourite ingredient. I have so many delicious nut butter recipes, and about a zillion ideas in my brain for more. I’m never ever going to stop making delicious sugar free treats with nut butter. Never ever. Don’t even TRY to convince me otherwise.
So today I bring you a recipe that is fast, easy and delicious. It requires just minutes of melting/stirring time and no candy thermometer is required! Its creamy, rich, and decadent yet healthy!  You will love it! It’s great for gifts, dessert platters, or any time you want a piece of deliciousness.
This recipe combines creamy almond butter with almond and coconut flour to create a soft and cakey bar. Pair that with a thick layer of melted chocolate, and you have a dessert no one can resist.
Trigger warning! If almond butter is your kryptonite, you may just want to look away for a while. Because these nut butter bars are bound to make you weak in the knees. They are so easy to make, even your kids could do it on their own.
Secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy, nutty goodness.
People go wild for these bars, and only take a few ingredients and 10 minutes (plus chilling time) to make, and then take just seconds to disappear.
But c’mon – I don’t have to tell you how delicious chocolate and almond butter is together. Nut butter recipes exist for a reason. They are so darn satisfying that if you keep a few of these in the freezer they will put an end to those sweet cravings once and for all but still have you staying in the healthy eating plan. Guaranteed!  😊

Ingredients

  • 1 1/2 cups almond, cashew or peanut butter
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup honey or maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil
  • Sea salt flakes

Instructions

  • Line an 5 x 7” loaf pan or baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    In a large bowl, add almond butter, almond flour, coconut flour, honey, melted coconut oil and vanilla. Mix until combined.
    Press mixture into a lined baking dish. Freeze for 30 minutes to harden while you melt the chocolate topping.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour melted chocolate mixture on top of nut butter layer. Sprinkle with flaky sea salt if desired. Freeze for 2 hours.
    Once the Almond Butter Bars are firm, use the parchment paper overhang to lift them out of the pan. Place them on a cutting board and cut into 12 bars or more smaller squares.
    Sprinkle sea salt on top (optional).
    Leftovers can be stored in the refrigerator, covered, for up to four weeks.
    Or place the bars in a zip-lock bag and store them in the freezer for up to six months.
