I love meal prepping overnight oatmeal every week to have a quick and healthy breakfast ready to go! And whether I'm staying home, or eating them on the go, these overnight oats hit the spot.
My raspberry chia overnight oatmeal recipe is filled with healthy good for you ingredients and healthy benefits from the high fiber oatmeal, nutrient superfood chia seeds, healthy fat and protein filled yogurt and milk.
The raspberries are like the icing on this healthy recipe! Raspberries are filled with anti inflammatory ingredients and fiber that's excellent for glowing skin!
When someone asks me for an easy, healthy breakfast idea, this overnight oats recipe is the first thing I suggest. It’s perfect for busy mornings, as you can make individual servings ahead of time and take them on the go.
It’s also satisfying enough to keep you full till lunch, made with simple ingredients like oats, chia seeds, and (optional) yogurt. But best of all, it’s fun.
What could be fun about oatmeal you ask? Well, this yummy breakfast is endlessly customizable. Once you learn how to make overnight oats, you can experiment with mix-ins like cocoa powder or vanilla extract or pile on toppings like nuts, seeds, and fresh fruit.

Ingredients

  • 1 cup rolled oats
  • 1 cup milk of choice
  • 1/2 cup vanilla or plain Greek yogurt
  • 1/2 cup raspberries, fresh or frozen

Toppings

  • Dollop of whipped coconut cream - recipe below in notes
  • Hemp seeds
  • Fresh raspberries

Instructions

  • Take 2 glass jars and in each jar, add ½ cup rolled oats and 1 tablespoon chia seeds.
    Next, add ¼ cup raspberries (fresh or frozen works) and ¼ cup vanilla yogurt.
    Top with ½ cup milk of choice. Stir very well to combine your raspberry overnight oats ingredients. Make sure the chia seeds are mixed in well to prevent any clumping.
    Top with some extra yogurt or whipped coconut cream (recipe below in notes) and a couple of fresh raspberries. Add lids. Store in the fridge overnight. These will be good for up to 5 days.
    Note: You can enjoy them cold, or heat them in the microwave. Heating your overnight oats will soak up some of the liquid, so add more milk if you like a thinner oatmeal texture!
