Berry Jelly Topped Slice

This fun slice is as delicious as it looks, with a buttery nutty base, and sweet jelly topping. Everywhere online on the recipe web sites you see raw, no bake slices, they all look stunning, perfect and most importantly, delicious!
I have a few no bake slices here on my blog but wanted to try a different flavour combo made up of 2 layers, so this Jelly Topped Slice was born!
This beauty is completely awesome, can I get a hallelujah?! Consisting of 2-layers of pure goodness. You can’t beat the combo of the nutty base with the mixed berry/chia seed jelly topping.
The best slice recipe you will make this week! Each slice bursts with flavour of berry jam, and the crunch of the base crust. Yum.Does it get any better?
Well yes, because you can keep these babies in the freezer and have a square any time you please. They don’t freeze solid, so are perfectly edible straight out of the freezer.
So I’m thinking snacks/desserts for the next couple of weeks!
The jam topping is make with gelatin, and like collagen, gelatin is packed with amazing amino acids, especially the anti-aging superstars glycine and proline, which are lacking in the most Western diets.

Ingredients

Nutty Crust

  • 1 cup almonds or walnuts
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut + a little extra to sprinkle on top
  • 1/2 cup oats, instant or quick
  • 1/2 cup peanut butter
  • 1/4 cup coconut oil, melted

Jelly Topping

  • 2 cups fresh or frozen (defrosted) berries
  • 1 cup water
  • 3 tablespoons gelatin
  • 1/4 cup honey or maple syrup

Garnish

  • Fresh or freeze dried fruit like raspberries.
  • Coconut

Instructions

Nutty Crust

  • Line an 8 x 8-inch baking pan with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon pan.
    Place almonds in a food processor and process until broken down and crumbly. Add dates, coconut, oats, peanut butter and coconut oil and continue to process until mixture is a thick, sticky dough.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crust.
    Remove the crust from the food processor and press evenly into the lined pan.  Set aside.

Jelly Topping

  • Puree the berries in your blender. Strain your berry puree through a sieve to remove any seeds. This should leave you with around 1 cup of berry juice.
    Place the berry juice, water, gelatin and honey in a saucepan. Heat over a low heat, whisking until fully combined. Cook for another 5 minutes until simmering at the edges. It should thicken a little. Do not boil!
    Let cool for around 10 minutes then pour over the base crust and place in the freezer to set for 30 minutes.
    Lift slice out of pan using the parchment paper handles and cut into 16 bars or more smaller slices.
    Garnish with fresh or freeze dried raspberries.
    Store in fridge for up to 1 week or freezer for up to 3 months.
