Ingredients
- 1 cup coconut butter - store bought or recipe below in notes
- 1/2 cup almond flour
- 1/2 cup desiccated coconut
- 2 tablespoons honey or maple syrup
- 2 teaspoons blue spirulina powder
- Pinch sea salt
Blue Coconut Coating
- 1/2 cup desiccated coconut
- Pinch blue spirulina powder
Instructions
- Ensure the coconut butter is at a softened consistency by warming it at a gentle heat in a medium sized pot. Once melted, take off the heat and add almond flour, coconut, honey, blue spirulina powder and salt to the pot and stir until combined. Only one pot to clean so that’s a good thing!Take tablespoons of the mixture and roll into 12-14 balls then roll in the desiccated coconut Add a dash of blue spirulina powder to the coconut to get that special blue colour on the outside of the balls.
