Strawberry Chocolate Truffles

Here is another one of those ‘bet you can’t eat just one’ treats!
If you are looking for a beautiful and delicious dessert to make to impress your friends and loved ones, then you must try out this truffle recipe!Truffles will always have my heart, and you can never go wrong with chocolate filled with creamy deliciousness.
These babies are almost too pretty to eat, but you definitely will want more than one! They have a creamy filling made with cashew and coconut butter along with strawberry powder. They also don't contain any gluten, dairy, or refined sugars!
Definitely make these for Valentines Day, a Galantine's party, or any special occasion. Velvety, smooth, healthy candy that's pretty in pink! This Strawberry Truffle recipe makes it easy to create homemade candy with swirls of strawberry with no candy thermometer needed!
They are quick to make with only a short ingredient list,but they look and taste so decadent. They have a creamy cashew, coconutty strawberry filling, and then the entire treat is dipped in white chocolate and decorated with sprinkles! Oh my! What a dreamy treat.
These gorgeous truffles are healthy because they are full of wholesome ingredients. They have cashews, coconut and freeze-dried strawberries. These ingredients are great sources of fibre, plant based protein, antioxidants, and vitamins. So this way you can most definitely have your cake and eat it too!
There are a few alternatives to making these bad boys. If you want a more special treat you can drizzle them in melted white chocolate or if you wish to skip the chocolate you can roll the bites in shredded coconut.

Ingredients

  • 2/3 cup almond flour
  • 1/2 cup cashew butter
  • 1/3 cup coconut butter, store bought or recipe below in notes
  • 2 tablespoons coconut flour
  • 3 tablespoons freeze dried strawberries or strawberry powder
  • 2 tablespoons honey or maple syrup

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Toppings

  • 3 tablespoons white chocolate chips
  • Sprinkles of choice

Instructions

  • In a bowl, mix together the cashew butter, coconut butter,almond flour, coconut flour, strawberry powder and honey. Set bowl in the fridge to chill for 30 mins.
    Take the out of the fridge and scoop out the truffle filling and roll into balls (makes about 10.)
    Place truffles on a parchment paper lined baking sheet and place in the freezer for 15 minutes while you melt the chocolate.
     

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Skewer each truffle or use 2 forks to hold each one and dip into the melted chocolate, then place on a rack to dry. Dip twice for extra coating.
    Put the truffles back into the freezer for at least 4 hours.
    Once the chocolate sets, melt your white chocolate and drizzle over top. Add your sprinkles to decorate.
    Store in the fridge for up to a month. Let them sit out at room temperature for a few minutes before enjoying
