Chocolate Covered Rice Cakes

Ah, the humble rice cake- often overlooked and underestimated. While not a standalone nutritional superstar, being essentially puffed rice pressed together, the right toppings can transform it in a far more satisfying (and exciting!) snack.
When people think of rice cakes, they often think of being on a diet. They were hailed as the snack time poster child of the low-fat-low-calorie era. The cardboard-esque, snack touted by dieters as long for as you can remember.
However, and despite dietary recommendations thankfully evolving, we are still somewhat hard-wired into this mindset. But there’s more to these light and crispy snacks. They were (and still are) thought of as being bland and leaving people hungry and unsatisfied.  But they do not have to be!
So … what to top them with? Nut butters are my number one favourite. The crunchy base lends itself perfectly to a variety of toppings that add flavor and nutrition and can serve as a convenient and versatile, hand-to-mouth vehicle for other nutrient-dense ingredients.
Here, and with a little strategic pairing, they can become a satisfying and balanced snack - leaving their reputation as a bland diet food relic far behind.
I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention. One of them that is making a huge buzz is around what is called “putting things on rice cakes”.
So, how do you turn a rice cake into a decadent and delicious snack? Easy! Create a decadent topping like this recipe and dress these bad boys up!
Now you can satisfy your sweet tooth with this delicious rice cake layered with peanut butter and chocolate spread. After all, peanut butter and chocolate are a classic duo and some things just shouldn't be messed with!
This recipe is a healthier version of a Reese's Peanut Butter Cup. So skip the processed candy bars and make this instead! With just a few simple ingredients, you can satisfy your sweet tooth fast.
While rice cakes may have a reputation as being bland and a little boring, the combination of creamy peanut butter, rich chocolate spread and a pinch of sea salt takes them to the next level.
This recipe is a nice healthy snack for kids and adults. It's also endlessly customizable. Add your own favourite toppings as well and make it your own.

Best Healthy Homemade Chocolate Protein Spread
Discover homemade healthy chocolate protein spread and you will never buy it at the store again. It’s smooth, chocolatey, and SO easy to make!
Super rich and creamy, it effortlessly holds its own with any of the chocolate spreads at the grocery store. And yet the homemade version also has fewer than half the calories per serving.
It’s much healthier than store-bought, without sacrificing any of the kid friendly classic chocolate taste that we all know and love. This sugar-free Nutella version is creamy and smooth, with a rich chocolate hazelnut flavor.
I have been making sugar-free chocolate spread for well over a decade now. And in fact, I may have been the first person to develop a recipe for it. It was way back in 2011, when I was craving some chocolatey deliciousness and it’s been a favorite ever since.
I was astonished that it was so easy to make my own homemade version. Best of all, I like it even better than the original. Because it is less tooth-achingly sweet, the chocolate hazelnut flavor shines through even more.
My whole family loves this delicious spread. We put it on everything - slathering on toast, drizzling on crêpes, mixing into cookie dough, on pancakes, cheesecake, puddings, smoothies and smoothie bowls  – you name it, we will drizzle this over it.
And I am also not above spooning it right out of the jar and straight into my mouth.
Its a decadent and healthy addition to breakfast, dessert or healthy snacks.
