Chocolate Dipped Protein Cake Pops

Cake Pops are delicious little cakes on a stick dipped in chocolate and covered with anything you desire. They are also super fun to make for the whole family and will disappear in no time during any party.
Kinda pretty, but still healthy Protein Cake Pops are made with just 5 ingredients, and no bake too! A great birthday cake protein snack or dessert recipe.

This recipe comes together quite effortlessly. I absolutely love it out of the freezer and crumbled into a chocolate smoothie for the most epic snack!
It’s shocking how good these are! If you let them thaw a little bit before snacking, they become the perfect texture. These babies are the perfect healthy sweet treat as the protein content will leave you feeling full while also satisfying and helping to curb sugar cravings while still being healthy!
That’s really the trick with eating healthier, its not limiting or denying yourself yummy things, its about ADDING good stuff so you don’t crave the not-so-good high sugar things that can wreck health.
Its about making sure you get all the good nutrients you need with some extra sweets snuck in. Doesn’t get any better than that.  🙂

Ingredients

  • 1 cup oat flour
  • 1/2 cup coconut flour
  • 1/2 cup protein or collagen powder
  • 1/4 cup almond milk (or choice of milk)
  • 1-2 tablespoons honey or maple syrup

Chocolate Coating

  • 1 cup milk chocolate chips
  • 1 tablespoon coconut oil

Chocolate Drizzle

  • 1/2 cup white chocolate chips
  • 1 teaspoon coconut oil
  • Cake pop sticks
  • Cake pop stand or foam block

Instructions

  • In a bowl, mix oat flour, coconut flour, protein powder and milk. Add a little more milk if the mix is too dry or coconut flour if the mix is too wet.
    Use a small ice cream scoop or a spoon to make 12-14 tablespoon sized balls on a parchment lined plate or tray. Place into the fridge for 20 minutes.
    Before coating with chocolate, you will need to add popsicle sticks to each pop and freeze until firm and set.
    IMPORTANT: before decorating or dunking the cake pops, melt a small amount of chocolate and dip the cake pop sticks in to it and stick them in to the cake pop. When cooled this acts like a glue and will keep your cake pops from falling off the stick or twisting when eating them.
    Place back into freezer for 1-2 hours for the sticks to set and firm up.
    To melt the chocolate coating, place chocolate chips and coconut oil in a small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the pops after checking they are firm and set. Use the popsicle sticks to hold each pop and dip into the melted chocolate coating, letting the excess chocolate drip off before pressing the cake pops into a block of foam or your small box with holes in it.
    Dip twice for extra coating if you have left over chocolate.
    TIP: I used a small carton box and poked a few holes in it. When dipping the cake pops I stick them into the box so they can dry perfectly round. You can also use this method for more complex decorating ideas.
    Top with extra drizzle of white chocolate or add chocolate chips, chopped nuts, hemp seeds, sprinkles or anything else you have in the pantry to decorate.
    Put the bars into the freezer for at least 2 hours for chocolate to set then serve.
    Decorating: You can get creative with decorating. I used one and a half cups of melted chocolate, one cup milk and one half cup white chocolate. I add coconut oil to each to thin the chocolate a little and give it a nice shine when it dries.
    You can even dip then with multiple chocolate types.
