Protein Pudding With Magic Chocolate Shell

This chocolate cottage cheese pudding makes a tasty make-ahead-of-time breakfast option or even a healthy dessert! Packed with protein and you only need 7 ingredients to make it!
Why I love making this chocolate cottage cheese pudding:
I always make including protein into my meals a priority, especially when it comes to breakfast. I usually don’t eat breakfast until 10-11am, which means by the time I have my first meal of the day it’s already been 14-16 hours since my last meal. My body needs the energy, but also the protein to help keep me satiated after a long fast.
I do my workouts first thing in the morning on an empty stomach as that is what works best for me, so that is what I do!, so a satiating, well balanced meal is exactly what I need.
As well as being packed with protein and a good source of fibre, this chocolate cottage cheese pudding is also packed with antioxidants in the cocoa, oats, tahini, chia and pomegranate seeds. If you choose to top it with a bit of melted dark chocolate like I did, you will be adding even more nutrition.
What’s magic chocolate shell?
If you have never had magic chocolate shell before, it’s a melted chocolate and coconut oil that (magically) hardens into a brittle candy shell when it’s poured over something cold like ice cream.
Chocolate shell works because of the coconut oil in the syrup. Above 76°F coconut oil is liquid and pourable, so when heated with chocolate, it creates a smooth, pourable chocolate sauce. Below that temperature however, coconut oil is solid. So when the warm syrup hits anything cold, it immediately solidifies, creating a hard candy shell.
The chocolate has an incredibly satisfying snap when you break or bite into it, and it’s kind of like eating a chocolate-covered ice cream bar in a bowl.
As well as the nutritional benefits, digging into this pudding also feels like you are eating a decadent dessert! Healthy eating is so much easier when what you are eating actually tastes good, isn’t it?
Can I have this chocolate cottage cheese pudding for breakfast?
Yes! This chocolate cottage cheese pudding is a well-rounded, balanced and healthy meal. Each serving offers 42g protein, which helps feed your body as well as balance your blood sugar levels. It also offers 7g of fibre, which means you are well on your way to the recommended 30g per day. Top with some fresh or frozen berries to make that even higher!
Apart from the chocolate shell, which is optional, everything in there is what you would include in a healthy breakfast. Things like cottage cheese, oats, protein powder, chia seeds, tahini and milk. I also added cocoa powder, which is a powerhouse for antioxidants.
Protein takes longer to digest than carbohydrates or fats, so a high-protein breakfast can keep you feeling full and satisfied for longer periods. This can help prevent overeating later in the day when food cravings become uncontrollable.
Cottage cheese is rich in protein, which is essential for muscle repair, growth, and overall health. It’s a great option for those looking to increase their protein intake, especially for vegetarians or those who don’t consume meat.
Why should I use cottage cheese in a sweet pudding?
Cottage cheese is similar to yoghurt in that it’s both mild and creamy, making it a great option to use in a sweet recipe. When blended with the other ingredients, it honestly doesn’t feel (or taste) like you are eating cheese! It’s such an easy way to include more protein into your diet.
You can make this chocolate cottage cheese pudding even if you don’t include protein powder. There will still be 20g protein per serving, and that protein comes from the cottage cheese. It also contains other important nutrients like calcium, phosphorus, selenium, vitamin B12, and riboflavin.
All my breakfast recipes are easy and take no time to prepare. I almost never have the time (or patience!) for anything that takes longer than 5-10minutes to make in the morning. That’s why breakfasts like this that you can prepare ahead of time or the night before are always the kind of breakfasts I turn to.

Ingredients

  • 1 cup cottage cheese
  • 1 scoop protein or collagen powder - chocolate or vanilla
  • 1 tablespoon tahini (sesame butter) or any nut butter
  • 1 tablespoon cocoa powder
  • 1 tablespoon chia seeds
  • 1 tablespoon oats
  • 1/2 cup milk of choice

Optional Toppings

  • Magic chocolate shell – 2 tablespoons dark chocolate chips melted with 1 teaspoon coconut oil and drizzled on top
  • Pomegranate seeds, berries or any fruit
  • Shredded coconut
  • Chopped nuts

Instructions

  • Add everything to a blender/food processor and blend until smooth.
    Transfer into a small serving dish/bowl, then top with an optional drizzle of melted dark chocolate.
    Refrigerate overnight or at least 2 hours, top with pomegranate seeds/berries and enjoy!
    Double or triple the recipe if you want to meal prep ahead.
  • Magic Shell Chocolate Topping
  • Combine chocolate and coconut oil in a small bowl and microwave for 15 to 30 seconds at 50% power, until chocolate is melty. Stir until completely smooth.
    Then pour over your protein pudding or ice cream and give it a minute to harden. Crack into the shell and enjoy!
