Chocolate Covered Banana Bites

These chocolate covered banana bites are like little ice cream bites - a delicious, healthy treat and a great alternative to store bought ice cream!  
You can whip these healthier banana bites up in like 20 minutes and one bite is the perfect size for a not-so-naughty treat, dessert or midnight snack.
They are the perfect after-school snack idea for kids. It's a healthy snack with just 3 ingredients kids can make themselves!
These little cubes of deliciousness are bananas and chocolate and peanut butter. It’s a recipe so simple that it barely deserves to be called a recipe, but even so, it’s a snack that feels extra special as these a-peel-ing morsels have it all: sweetness, saltiness, - and bananan-ess.
They are - after all - just bananas and chocolate, but this recipe does them one better. The dipping chocolate is incredibly simple - you only need some coconut oil to add to chocolate chips when you melt it to give it that “magic shell” effect and it helps the chocolate harden back up once you have dipped in the cold banana.
It helps to use a fork or even two to dip the bananas (or skewer them) without a big mess and then you can just line them up on a baking sheet and chill them until they have set up.
I love adding yummy toppings like chopped nuts, toasted seeds, shredded coconut, muesli, or hundreds and thousands.
You can keep them in the fridge or the freezer depending on the kind of texture you like, but either way, they are sure a delicious little snack to have on hand.
Swap out the ice cream for this nice cream alternative for the perfect healthy dessert or midnight snack for when the sweet tooth hits.

Ingredients

  • 2 ripe bananas
  • 1/4 cup peanut (or almond) butter

Chocolate Coating

  • 1 1/2 cups chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 teaspoon flaky sea salt

Instructions

  • Slice bananas into1/3-inch thick slices and arrange in one layer on baking sheet lined with parchment paper.
    Add a dollop (1/2 to 1 teaspoon) of nut butter to half the banana slices, then sandwich with a plain banana slice.
    Place the baking sheet into the freezer for 20-30 minutes.
    Towards the end of that time, combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips, condensed milk and coconut oil together.
    Once bananas are chilled, use two forks to dip banana bites in melted chocolate.
    Place on parchment paper lined baking sheet once more, sprinkle with sea salt, then chill until hardened.
    Keep in refrigerator or freezer.
