Berries & Cream Gummy Snacks

It’s also calcium and Vitamin D rich, making it a great bone strengthener.These homemade sweet but healthy treats are just that…homemade. Ingredients
- 1 cup blueberries - fresh or frozen and defrosted
- 2/3 cup coconut milk, full fat
- 4 tablespoons gelatin
- 2-3 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
Instructions
- Measure out the gelatin in a small dish or bowl and add the coconut milk. Let stand for 10 minutes for the gelatin to “bloom”. This step is important to soften the gelatin so it dissolves quicker and better when mixed into the main gummy ingredients.Combine all ingredients, the ‘bloomed’ gelatin in the coconut milk, blueberries, lemon juice and honey in a food processor and process until everything is smooth.Note: Do not blend more than is absolutely necessary.The more you blend, the more air gets incorporated in, which makes the gummies turn out fluffier, sort of like a marshamallow-y consistency.If you're using a silicon mold, transfer your blueberry mixture into a container with a spout and carefully pour it into the mold. Otherwise, just pour it all into an 8x8 square pan (silicone is best, but glass or nonstick will do). There may be a layer of foam on the top, so if there is and you don't want it on there, just skim it off. Transfer to freezer and let sit for 30 minutes, or refrigerate for about an hour.Remove and pop out your gummies. If you used the 8x8 pan, cut your gummies into fun shapes with a cookie cutter or just slice into cubes (cubes will give you zero waste). They will keep at room temperature but will last longer if stored in the fridge.
