Ingredients
- 1 cup coconut butter, store bought or recipe below in notes
- 1/2 cup tahini well-stirred (or any nut butter)
- 1/2 cup dates soaked at least 30 minutes, drained, chopped
- 1/2 cup oats, instant or quick
- 1/2 cup desiccated coconut
- 1/4 cup cocoa or cacao powder
- 1-2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 cup sesame seeds for rolling
Instructions
- Put everything, except the sesame seeds, in a food processor and process until the mixture is smooth.Scoop the mixture out and make 12 (or more) tablespoon sized balls.Pour the sesame seeds out onto a plate and roll each energy ball over them to completely coat.Arrange on a tray lined with greaseproof paper and place into the fridge for a couple of hours to set.Then store in the fridge until hunger strikes.
