Soft-Serve Peanut Butter Protein Nice Cream

I know, I know, I eat a lot of nice cream. But hey, its just too tasty to go a day without it! And it really is an extremely healthy snack so I feel good about enjoying it at any time of the day.
That's quite a title, isn't it? Soft-Serve Peanut Butter Protein Nice Cream. I tried to shorten it, but I don't think there's a word in there that isn't totally necessary. "Healthy" is important, but I couldn’t fit it in because this ice cream is totally guilt-free. Honest!
Starting with a frozen banana, adding peanut butter, protein powder and almond milk, you can have soft serve protein ice cream in a matter of minutes!
This divine combination is not the first time it has made its way to my recipes …and it definitely won’t be the last time you see these ingredients together!  I have a weakness for anything with peanut butter in it. 
I eat it for breakfast, snacks, and today, I’m using it in a simple, 4-ingredient Peanut Butter Soft-Serve!  This soft-serve is the texture of a creamy ice cream and reminds me of a Wendy’s Frosty. It’s healthy enough to eat for breakfast and quick enough to whip up after a long day for a delicious dessert! 
This nice cream allows you to enjoy all the flavours, textures and chilliness of ice cream without the guilt of the fat, sugar and chemicals. With just a small handful of simple ingredients you can create the most deliciously smooth and cream, not-really-ice-cream that you've ever tasted.
Once you start making nice creams, you will stop buying store bought ice cream, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

Ingredients

  • 1 medium banana, sliced, frozen
  • 1 tablespoon peanut butter
  • 1/2 scoop vanilla protein powder
  • 1 tablespoon almond milk (plus extra if needed)

Toppings

  • Whipped coconut cream, store bought or recipe below in notes
  • Chopped toasted nuts

Instructions

  • Place frozen banana slices in a food processor, along with peanut butter. Blend until banana is broken up. Pour in 1 tablespoon of almond milk and blend until smooth. If your mixture is still too thick, add an extra tablespoon of almond milk.
    Scoop soft-serve into a dish and enjoy plain or top with a dollop of whipped coconut cream and chopped toasted nuts or drizzle some peanut butter over the top.
