Macadamia Banana Health Fudge

This heavenly macadamia banana fudge recipe isn't just delicious but filled with healthy ingredients you will actually feel good about eating.
Its super rich, creamy, and banana-licious. It's so good that you would think it took forever to make, but it's really ready in a flash!
Is there anything better than fudge? I certainly don't think so!  This particular fudge is exceptionally great because it's so rich and creamy, and it takes almost no effort to make it.
Fudge is usually loaded with sugar but this much less sugary version makes for a great dessert or anytime snack. The natural sweetness of banana gets mixed right into the fudge along with a dash of honey, so no sugar needed!
It's plant-based and is “better for you”so this fudge is destined to become you and your families favourite treat. It also makes a perfect edible gift for friends and family.

Ingredients

  • 1 1/4 cups macadamia nuts, toasted (see note below) divided
  • 1 cup coconut butter, store bought or recipe below in notes
  • 1 medium banana, mashed
  • 1-2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • If you prefer your macadamia nuts toasted to extract more flavour, preheat oven to 325°F. Line cookie sheet or tray with parchment paper or aluminium foil and toast for 10-12 minutes, or until lightly browned.
    Line a 9 x 5” loaf pan with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Combine the coconut butter and honey into a medium sized saucepan over low/medium heat to soften the coconut butter and honey. Remove from heat, add vanilla extract and mashed banana. Stir until combined.
    Place 1 cup of the macadamia nuts (either raw or toasted) into food processor and blend until nuts form a smooth paste.. Add to the melted ingredients in the saucepan and stir until smooth and well combined..
    Chop the remaining ¼ cup of macadamia nuts and fold a handful into the fudge to add some texture, while keeping some to sprinkle on top.
    Pour into loaf pan and smooth out with a spatula or back of a spoon. Sprinkle with remaining chopped macadamia nuts.
    Place in fridge to chill for at least 4 hours. Then remove, cut into squares, and serve.
    Store in fridge for up to 2 weeks or in freezer for up to 3 months.
