Coconut Ice Cream – Creamy, No-Bake Protein Nice Cream

What happens when you combine creamy coconut, sweet banana and rich chocolate? You get a dreamy frozen dessert that tastes wonderfully indulgent but is made with just a handful of simple ingredients!

This Coconut Ice Cream is a delicious homemade treat for anyone who loves the combination of chocolate and coconut. Ripe bananas create a naturally sweet, creamy base, coconut milk or coconut cream adds that luscious tropical richness, and protein powder gives the mixture a satisfying protein boost.

But we are not stopping there! Each serving gets a generous drizzle of homemade chocolate sauce made with melted chocolate, coconut oil and coconut milk. The result is a beautiful contrast of creamy coconut ice cream and glossy chocolate that makes every spoonful feel special.

Best of all, you do not need an ice cream maker. With a blender or food processor and a little freezer time, you can make this delicious frozen treat at home.

Why You Will Love This Coconut Ice Cream

🥥 Creamy coconut texture: Coconut milk creates a lovely tropical flavour, while coconut cream makes the ice cream even richer.

🍌 Naturally sweetened: Ripe bananas bring natural sweetness and help create a smooth, thick texture without needing lots of added sweetener.

💪 An added protein boost: Protein powder helps increase the protein content, making this a more substantial treat than a simple banana-based dessert.

❄️ Easy to make: No complicated equipment or lengthy preparation is required. Blend, freeze, drizzle and enjoy!

The Secret To Creamy Banana Coconut Ice Cream

The magic of this recipe starts with frozen bananas. When blended, frozen bananas transform into a thick, smooth mixture with a texture similar to soft-serve ice cream. Their natural sweetness also balances the deeper flavours of chocolate and coconut. For the best results, use ripe bananas with plenty of brown speckles. Peel and slice them before freezing so they are easier to blend.

Next comes the coconut milk or coconut cream. Coconut milk gives the ice cream a lighter consistency, while coconut cream creates a richer, more indulgent result. Choose whichever suits your taste and the texture you prefer.

Protein powder adds flavour and protein in one simple step. You can use vanilla or chocolate or any other flavour you love. Different brands vary in sweetness and thickness, so start with the recommended amount and adjust to suit your preferences. If your mixture is too thick to blend, add a small splash of coconut milk rather than pouring in too much liquid at once.

The goal is a thick, creamy mixture that can be eaten straight away as soft serve or frozen until firm enough to scoop.

Do Not Skip The Homemade Chocolate Drizzle!

The finishing touch is a simple chocolate sauce that makes this dessert look and taste extra special. Melted chocolate combines with a little coconut oil to create a glossy sauce. Adding coconut milk helps bring the ingredients together and gives the drizzle a smoother consistency.

Here is a handy tip: use the remaining coconut milk from the can you opened for the ice cream. It reduces waste and means you don’t need to open another carton.

Allow the chocolate drizzle to cool slightly before pouring it over the ice cream. If the ice cream is very cold, the chocolate may firm up quickly, creating delicious little chocolate ribbons. Drizzle just before serving for the prettiest finish.

Why Add Protein?

At Blended Bites, we love finding simple ways to make everyday treats more nourishing without losing the fun of eating something delicious.

Protein contributes to the maintenance and repair of body tissues, including muscles. Including protein in snacks and desserts can also help make them more satisfying as part of a balanced eating pattern.

Here, vanilla or chocolate protein powder works beautifully with banana and coconut to create a dessert that feels indulgent while providing more than fruit alone. The exact protein content will depend on your protein powder, coconut product and serving size.

This is what our Addition Eating philosophy is all about: adding nourishing ingredients to foods we already love rather than focusing on what we need to remove.

Make It Your Own

There are plenty of ways to customise this recipe:

Add extra coconut: Sprinkle toasted coconut flakes over the chocolate drizzle for a little crunch.

Try a chocolate-coconut crunch: Add cacao nibs or finely chopped dark chocolate.

Make it sweeter: If your bananas are not very ripe, blend in a little maple syrup or a soft date.

Add a pinch of salt: A small pinch of sea salt can bring out the chocolate flavour beautifully.

Create a sundae: Serve in a bowl with sliced banana, coconut flakes and extra chocolate sauce.

A Delicious Treat To Keep In The Freezer

This Coconut Ice Cream is perfect for warm afternoons, after-dinner desserts or whenever you fancy something cool, creamy and chocolatey.

You can enjoy it straight from the blender as soft serve, or freeze it for a firmer, scoopable consistency. If freezing it for later, let it sit at room temperature for a few minutes before serving so it softens enough to scoop easily.

With its creamy banana base, tropical coconut flavour and irresistible chocolate drizzle, this is proof that homemade frozen treats can be simple, satisfying and absolutely delicious.

Make a batch, add that chocolatey finishing touch and enjoy a little Blended Bites magic straight from your freezer! 🥣

Ingredients

Ice Cream

  • 3 ripe bananas, peeled, sliced and frozen
  • 1/2 cup coconut milk or coconut cream, plus a little extra if needed
  • 2 scoops vanilla or chocolate protein powder (adjust to taste and the size recommended on your product)

Chocolate Drizzle

  • 1/2 cup dark or milk chocolate chips or chopped chocolate
  • 1 teaspoon coconut oil
  • 1-2 tablespoons of the remaining coconut milk from the can

Instructions

  • Freeze the bananas. Slice the bananas and freeze until solid, preferably overnight.Freezing them in a single layer makes them easier to blend.
Blend the ice cream. Add the frozen banana slices, coconut milk or cream and protein powder to a high-powered blender or food processor. Blend, stopping to scrape down the sides as needed, until thick and creamy. Add a little extra coconut milk only if needed to help the mixture blend.
Choose your texture. Serve immediately for a soft-serve consistency, or transfer to a freezer-safe container and freeze for 2–3 hours for a firmer texture. For longer freezing, allow extra time to soften before scooping.
Make the chocolate drizzle. Place the chocolate chips and coconut oil in a heatproof bowl. Melt gently in short microwave bursts, stirring between each, or use a bowl over a saucepan of gently simmering water.
Add the coconut milk. Stir in 1 tablespoon of the remaining coconut milk until smooth. Add a little more if needed to create a pourable drizzle. If the sauce becomes too thick, warm it gently while stirring.
Serve. Scoop the ice cream into bowls and drizzle with the chocolate sauce. Finish with toasted coconut flakes or chopped dark chocolate, if desired.
    Notes
Coconut milk or cream: Coconut cream gives a richer result; coconut milk creates a lighter texture. Full-fat products generally produce a creamier dessert.
Protein powder: Different brands absorb liquid differently, so adjust the coconut milk gradually. The flavour and sweetness will vary by brand.
Blender tip: If your blender struggles with frozen bananas, let them sit for 3–5 minutes before blending and scrape down the sides regularly.
Storage: Keep leftovers in an airtight, freezer-safe container. For the best texture, enjoy within about 1–2 weeks. Let the ice cream soften at room temperature before scooping.
Chocolate sauce: The drizzle will firm up on very cold ice cream. This creates a lovely chocolate-shell effect. For a softer sauce, allow it to cool slightly before serving.
