What Makes These Protein Bon Bons Special?

The secret to the creamy strawberry centre is coconut cream. Thick, rich, and naturally dairy-free, coconut cream creates a luscious texture that works beautifully in frozen desserts. Combined with fresh strawberries and vanilla protein powder, it produces a delicious strawberry ice cream filling with a boost of protein.

Strawberries bring natural sweetness, beautiful colour, and a fresh fruity flavour that balances the richness of the coconut cream. They are also a source of vitamin C and other beneficial plant compounds.

Vanilla protein powder adds extra protein while complementing the strawberries. A little vanilla extract enhances the flavour, while a small amount of maple syrup can be added if your berries aren’t quite sweet enough.

The result is a creamy, fruity centre that tastes like strawberry ice cream rather than a typical protein snack.

The Magic Of The Chocolate Shell

Of course, what would a bon bon be without chocolate?

A coating of melted dark chocolate creates a delicious contrast to the cool, creamy strawberry filling. Once frozen, the chocolate forms a thin shell that cracks satisfyingly when you bite into it.

Dark chocolate works particularly well because its rich cocoa flavour balances the sweetness of the strawberries. Adding a teaspoon of coconut oil to the melted chocolate helps create a smoother coating that sets beautifully around each frozen centre. You can also use milk chocolate or sugar-free chocolate if you prefer. The choice is yours!

A Homemade Treat With Ingredients You Choose

Making your own frozen treats means you control what goes into them. Rather than relying on commercial ice cream products, you can use coconut cream, real strawberries, protein powder, and your favourite chocolate. You can also adjust the sweetness to suit your taste and experiment with different flavours.

Want to make them extra special? Add a little finely grated lemon zest to the strawberry mixture for brightness, or stir through some finely chopped freeze-dried strawberries for a more intense berry flavour. You could even sprinkle a few crushed freeze-dried strawberries over the chocolate coating before it sets.

These bon bons are perfect for keeping in the freezer when you want a little something sweet after dinner, a refreshing afternoon treat, or a healthier homemade dessert to share with friends. They are also ideal for entertaining because they look impressive without requiring complicated preparation.

How To Get The Best Results

The most important step is freezing the strawberry centres thoroughly before dipping them in chocolate. Firm centres are much easier to handle and help the chocolate coating set quickly.

Make sure your coconut cream is thick rather than watery. If your can separates in the fridge, use the thick cream from the top. Too much liquid can make the filling icy rather than creamy.

When dipping, work in small batches and return the bon bons to the freezer if they begin to soften.

Once finished, store them in an airtight container in the freezer. Let them sit at room temperature for a few minutes before eating for the creamiest texture.

These Strawberry Ice Cream Protein Bon Bons prove that a nourishing treat can still feel like a little luxury. Creamy strawberry filling, a crisp chocolate shell, and a protein boost in every bite – what’s not to love?

Ingredients

Strawberry Ice Cream Filling

  • 1 cup fresh or frozen strawberries, thawed if frozen
  • 1/2 cup thick coconut cream
  • 1 scoop vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons maple syrup, to taste
  • 1 tablespoon coconut flour, if needed to thicken the mixture

Chocolate Coating

  • 1 cup dark chocolate chips or chopped chocolate
  • 1 tablespoon coconut oil

Instructions

  • Blend the filling: Add the strawberries, coconut cream, protein powder, vanilla extract, and maple syrup to a blender. Blend until smooth and creamy.
Adjust the consistency: If the mixture is too soft to shape, add the coconut flour a little at a time. The filling should be thick enough to hold its shape once chilled.
Shape the bon bons: Spoon the mixture into small silicone moulds or roll into 12 small balls. Silicone moulds are particularly useful if you want the rounded appearance shown in the recipe image.
Freeze: Place in the freezer for 3–4 hours, or until completely firm.
Melt the chocolate: Gently melt the dark chocolate with the coconut oil in a microwave in short intervals, stirring between each, or use a heatproof bowl over a saucepan of gently simmering water.
Dip the centres: Remove the frozen strawberry centres from their moulds. Working quickly, dip each one into the melted chocolate, allowing the excess to drip off.
Set the coating: Place the coated bon bons on a baking-paper-lined tray. Return to the freezer for 10–15 minutes, until the chocolate has set.
Store and serve: Keep in an airtight container in the freezer. Allow to soften for 3–5 minutes before serving.
    Tips and Variations
Extra berry flavour: Add 1 tablespoon of finely crushed freeze-dried strawberries to the filling.
White chocolate version: Use melted white chocolate for a sweeter coating.
Strawberry crunch: Sprinkle crushed freeze-dried strawberries over the chocolate before it sets.
Dairy-free option: Choose a dairy-free protein powder and dairy-free chocolate.
Creamiest texture: Use thick coconut cream and avoid adding extra liquid.
