Ingredients

Berry Chia Jam Centre

  • 2 cups fresh or frozen mixed berries, raspberries or strawberries
  • 2 teaspoons chia seeds
  • 1-2 tablespoons maple syrup or honey, to taste
  • 1 tablespoon lemon juice
  • 1 scoop vanilla or unflavoured protein powder

Chocolate Coating

  • 1 cup dark chocolate chips or chopped chocolate
  • 2 teaspoons coconut oil

Optional Toppings

  • Freeze-dried berry crumbs
  • Chopped almonds or pistachios
  • A sprinkle of chia seeds
  • Flaky sea salt

Instructions

  • Add the berries to a small saucepan over medium heat. Cook for 5–8 minutes, stirring and gently mashing until juicy and broken down.
    Stir in the chia seeds and sweetener. Simmer for another 1–2 minutes, then remove from the heat.
    Mix in the lemon juice and leave the jam to cool until no longer warm.
    Stir in the protein powder until smooth. If the mixture is too thick, add a little water; if it's too loose, allow it to rest longer so the chia seeds can absorb more liquid.
    Line a tray with baking paper. Spoon the mixture into 10–12 small mounds or use a silicone mould.
    Freeze for 2–3 hours, or until the centres are firm enough to dip.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bites and working quickly, using two forks, dip one bite at a time into the bowl of melted chocolate until it is fully coated. Lift the bite from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bites.
    Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl. 
    Return to the lined tray and add optional toppings.
    Freeze for another 10–15 minutes until the chocolate has set.
    Keep in an airtight container in the freezer for up to 1 month. Let each bite sit at room temperature for 3–5 minutes before eating for a softer, jammy centre.
