No-Bake Protein Carrot Cake Bars

Carrot cake is one of those desserts that never really goes out of style. Sweet carrots, warming cinnamon, creamy frosting and that unmistakable homemade-cake flavour – it is pure comfort food. But you do not need to turn on the oven to enjoy it.

These No-Bake Protein Carrot Cake Bars have all those delicious carrot cake flavours in a soft, chewy bar that is incredibly easy to make. The base combines oat flour, fresh grated carrot, protein powder, dates and nut butter, then gets finished with a creamy yogurt frosting.

No baking. No complicated ingredients. Just blend, press, frost and chill. And because they are stored in the refrigerator, they are ready and waiting whenever you want a little carrot cake-inspired treat.

Carrot Cake Without The Baking

I love recipes that make healthy homemade treats feel easy. There is something particularly satisfying about opening the refrigerator and finding a batch of homemade bars ready to go. These are perfect for those moments when you want something sweet but don’t want to spend an hour in the kitchen.

The base has a lovely soft texture thanks to the combination of dates and nut butter. Oat flour gives the bars structure, while protein powder adds a satisfying protein boost. And then there is the carrot.

Freshly grated carrot adds natural sweetness, colour and moisture while giving these bars their unmistakable carrot cake identity.

The Secret To A Good No-Bake Bar

The key to no-bake bars is getting the texture right. You want the mixture to be moist enough to hold together when pressed into the pan, but not so wet that the bars become sticky or difficult to slice.

Dates are perfect for this job because they are naturally soft and sticky. When blended with nut butter, they create a wonderfully chewy base that helps hold everything together. If your dates are a little dry, soak them in warm water for 5–10 minutes, then drain and pat them dry before using.

Protein powder and oat flour absorb moisture, so you may need a tiny splash of milk depending on the ingredients you are using. Add it gradually – you can always add more, but you can’t easily take it away!

Don’t Skip The Cinnamon

Cinnamon is what really makes these taste like carrot cake. I like a generous teaspoon, but if you love warm spices, you can add a little ground ginger or nutmeg too. Vanilla also helps bring all those flavours together.

And if you are a fan of traditional carrot cake, chopped walnuts or pecans are a wonderful addition. They add a lovely crunch to the soft bars. You could also add a few raisins or shredded coconut.

The Creamy Yogurt Frosting

Of course, carrot cake needs frosting. This simple yogurt frosting is creamy, lightly tangy and makes the perfect contrast to the sweet, chewy base.

Use thick Greek yogurt or strained natural yogurt. A little cream cheese can be added if you want a richer, more traditional cheesecake-style frosting. Sweeten it with a little honey or maple syrup and add vanilla. Spread it over the chilled carrot cake base, then return everything to the refrigerator until firm. For especially neat slices, chill the frosted bars for at least an hour before cutting.

A Few Simple Variations

Want to change things up?

Try almond butter instead of peanut butter for a more classic carrot cake flavour.
Add chopped walnuts, pecans or pistachios for crunch.
Stir through shredded coconut for a tropical twist.
Or add a little orange zest to the base for a beautiful carrot-orange combination.
You could even drizzle the finished bars with a little melted dark chocolate.

Ingredients

Carrot Cake Base

  • 1 1/2 cups oat flour
  • 1 cup finely grated carrot
  • 1 cup soft Medjool dates, pitted
  • 1/2 cup almond butter, cashew butter or peanut butter
  • 2 scoops vanilla protein powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground ginger, optional
  • Pinch of sea salt
  • 1-3 tablespoons milk, as needed

Optional Add-Ins

  • 1/4 cup finely chopped walnuts or pecans
  • 2 tablespoons desiccated coconut
  • 2 tablespoons raisins
  • 1/2 teaspoon orange zest

Yogurt Frosting

  • 1 cup Greek yogurt
  • 2 tablespoons cream cheese, softened, optional
  • 1-2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract

Instructions

Carrot Cake Base

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Finely grate the carrot. If it is particularly wet, gently squeeze out a little of the excess moisture.
    Add the dates and nut butter to a food processor. Process until they form a sticky, fairly smooth mixture.
    Note: If your dates are hard, soak for 10 minutes in warm water and drain.
    Add the oat flour, protein powder, cinnamon, ginger and salt. Process briefly until combined.
    Add the grated carrot and vanilla. Pulse several times until everything is evenly combined.
    The mixture should be soft and sticky enough to press together. If it seems too dry, add milk 1 tablespoon at a time. If it seems too wet, add another tablespoon of oat flour.
    Fold through chopped walnuts, coconut, raisins or orange zest if using.
    Press the mixture firmly and evenly into the base of the lined pan.

Yogurt Frosting

  • Mix the Greek yogurt, cream cheese if using, honey or maple syrup and vanilla until smooth.
    Spread the yogurt frosting evenly over the carrot cake base.
    Refrigerate for at least 2 hours, preferably longer, until firm.
    Remove from the pan and cut into 16 bars or more smaller squares.
    Keep the frosted bars refrigerated in an airtight container for up to 5 days.
    For longer storage, freeze the unfrosted base for up to 2 months. Thaw in the refrigerator, add the yogurt frosting and chill before serving.
