Ingredients

Date Base

  • 12 large Medjool dates, pitted
  • Pinch of sea salt

Protein Yogurt Layer

  • 2 cups thick Greek yogurt (or dairy-free Greek-style yogurt)
  • 1 scoop vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon maple syrup or honey (optional)

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Chopped roasted peanuts
  • Chopped pistachios
  • Toasted coconut
  • Cacao nibs
  • Hemp hearts
  • Flaky sea salt
  • Freeze-dried raspberries

Instructions

  • Line a small tray or loaf pan with baking paper.
    Slice the dates lengthwise and remove the pits.
    Arrange the dates in a single layer and press them together firmly using the back of a glass or rolling pin to create an even base.
    In a bowl, mix together the Greek yogurt, protein powder, vanilla, and maple syrup until smooth and creamy.
    Spread the yogurt mixture evenly over the date layer.
    Freeze for about 1 hour until the yogurt layer is firm.

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the melted chocolate over the frozen yogurt layer and spread evenly.
    Sprinkle with your favourite toppings while the chocolate is still soft.
    Freeze for another 30–60 minutes until completely firm.
    Break or slice into 10-12 pieces (more or less) and enjoy.
    Store in an airtight container in the freezer for up to 2 months. Allow the bark to sit at room temperature for 2–3 minutes before eating for the best texture.
