Chocolate Raspberry Coconut Protein Bars

Chocolate Raspberry Coconut Protein Bars

If you love the classic combination of raspberry, coconut, and chocolate, these Chocolate Raspberry Coconut Protein Bars are about to become your newest obsession. Sweet, creamy, fruity, and coated in a rich layer of chocolate, they taste like an indulgent dessert bar – yet they are made with wholesome ingredients and packed with protein to keep you feeling satisfied and energised.

These bars are inspired by those nostalgic chocolate coconut treats many of us grew up loving, but with a healthier, more nourishing twist. Instead of refined sugars and processed ingredients, this version uses simple pantry staples that come together to create something that feels decadent while still supporting your wellness goals.

The coconut layer is soft, chewy, and naturally sweetened, creating the perfect creamy centre. Desiccated coconut gives the bars their signature texture, while coconut cream adds richness and helps bind everything together. The flavour is sweet and tropical without being overpowering, creating the perfect base for the bright raspberry layer.

Raspberries bring freshness, colour, and a vibrant tartness that balances the richness beautifully. Their natural sweetness pairs perfectly with coconut and chocolate, creating that classic flavour combination that never gets old. Whether you use fresh or frozen raspberries, they blend into the filling and add little bursts of fruity flavour throughout every bite.

To turn these bars into a more balanced snack, protein powder is added directly into the coconut filling. It blends seamlessly into the mixture, boosting the protein content while maintaining that soft, creamy texture. This makes the bars ideal as a post-workout snack, afternoon energy boost, or healthier dessert option when sweet cravings strike.

Then comes the best part – the chocolate coating. Each bar is dipped or covered in silky melted dark chocolate, creating that irresistible snap once chilled. The rich chocolate layer perfectly complements the creamy coconut and tangy raspberry centre, making these bars taste incredibly indulgent despite their wholesome ingredient list.

One of the best things about this recipe is how simple it is to make. There’s no baking, no complicated steps, and no fancy equipment required. The filling comes together in minutes, and once chilled, the bars are coated in chocolate and returned to the fridge until firm. It’s the kind of recipe that looks impressive but is surprisingly easy to prepare.

These bars are also perfect for meal prep. They store beautifully in the fridge and freezer, making them ideal for keeping on hand whenever you need a quick snack or healthy sweet treat. Because they’re rich and satisfying, a little goes a long way – though it’s hard to stop at just one.

If you are someone who loves healthy desserts that still feel indulgent, these Chocolate Raspberry Coconut Protein Bars deliver everything you could want. Creamy coconut, bright raspberry flavour, rich chocolate, and a boost of protein all come together in one irresistible no-bake bar. 🌸

Ingredients

Raspberry Coconut Filling

  • 2 cups desiccated coconut
  • 2 scoops vanilla or strawberry protein powder
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/2 cup raspberries (fresh or frozen, thawed)
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt

Chocolate Coating

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
In a food processor or mixing bowl, combine coconut, protein powder, hardened coconut cream, maple syrup, raspberries, vanilla, and salt.
Mix until the mixture becomes sticky and holds together when pressed.
Press firmly into the prepared dish and smooth the top.
Refrigerate for 1–2 hours, or until firm enough to slice.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
Remove the bars and after checking they are firm and set, remove from pan using the parchment paper handles and cut into 8-10 bars or pop out of molds.
Working quickly, using two forks, dip one bar at a time into the bowl of melted chocolate until it is fully coated. Lift the bar from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining bars.
Or hold each one with a fork over the melted chocolate and spoon it over letting the excess drip back into the bowl.
Sprinkle with flaky salt if desired, then chill until chocolate has set.
Place bars back into the fridge until the chocolate is fully set.
    Serve chilled and enjoy.
Store in the fridge for up to 1 week or freeze for up to 2 months,
    Optional Toppings
    Freeze-dried raspberries
    Extra desiccated coconut
    White chocolate drizzle
