Ingredients

Date Bark

  • 12 large 12 Medjool dates, pitted (note if using dried dates, soak for 10 minutes in warm water and drain)
  • 2 tablespoons natural peanut butter or almond butter 

Protein Ice Cream Layer

  • 1 1/2 cups thick Greek yogurt (or dairy-free yogurt)
  • 1 scoop vanilla protein powder
  • 1 tablespoon maple syrup or honey (optional)
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1 cup dark chocolate chips
  • 1 tablespoon coconut oil

Optional Toppings

  • Chopped peanuts or almonds
  • Toasted coconut flakes
  • Cacao nibs
  • Freeze-dried raspberries
  • Hemp hearts
  • Flaky sea salt

Instructions

  • Line a small tray or loaf pan with baking paper.
    Arrange the dates in a single layer and press them together (so they are touching each other) firmly with the back of a glass or rolling pin to form an even base.
    Spread the peanut butter evenly over the date layer.
    In a bowl, mix together the Greek yogurt, protein powder, maple syrup, and vanilla until smooth.
    Spread the protein mixture evenly over the peanut butter layer.
    Freeze for 1–2 hours until firm.  

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the chocolate over the frozen yogurt layer and spread quickly.
    Sprinkle with your favourite toppings.
    Freeze for another 20–30 minutes until completely set.
    Break or slice into bark pieces and enjoy.
    Store in an airtight container in the freezer for up to 1 month.
