Hemp Seed Delight Bars

These no bake, hemp seed bars make a delicious healthy grab and go breakfast, snack or dessert. Packed with protein, healthy fats, omega 3, vitamins, minerals and fibre, these bars will give you a huge boost of both nutrients and energy.
A great bar before or after a workout, packed with real food ingredients!  The combination of nuts, hemp seeds, dates and peanut butter makes for a chewy, delicious treat.  Try one....you won't be disappointed!
Hemp seeds are widely regarded as the world’s most nutritious seeds and are one of the world's best sources of complete protein, which means that they provide all nine essential amino acids that are required by the body to build proteins.
… hemp seeds have the ideal ratio of omega-6 and omega 3 fatty acids. These days, we eat a ratio of 21:1, when we really need a ratio of 3:1. Luckily for us, hemp seeds contain omega fatty acids in exactly this ratio.
They are a rich source of heart-healthy fatty acids, essential vitamins and minerals, including vitamin E, phosphorus, potassium, sodium, magnesium, sulphur, calcium, iron and zinc.
… hemp seeds contain the B-vitamins B1 and B2. B1 is important for our nervous system and B2 actually helps us feel less stressed due to its effect on the hormone cortisol.

Ingredients

  • 1 cup nuts of your choice (for example almonds, walnuts or a mix)
  • 1 cup dates, soaked at least 30 minutes and drained
  • 1 cup hemp seeds
  • 1/2 cup desiccated coconut
  • 1/2 cup peanut (or any nut or seed) butter
  • 1/4 cup coconut oil, melted
  • 2 teaspoons peanut (or any nut or seed) butter

Toppings

  • Freeze-dried raspberries or hemp seeds to sprinkle Other topping ideas - melted chocolate chips, dried fruits, chopped nuts, slivered almond, or shredded coconut.

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle for easier removal.
    Pace the nuts into a food processor and process until broken down and crumbly. Add the dates, coconut, hemp seeds, coconut oil, peanut butter and vanilla extract and process until well combined into a sticky dough. Be careful not to over process as leaving some chunks is good for texture and its nice to have different sized ‘bits’ in these bars.
    Press the base mixture into the bottom of your pan or dish evenly. Refrigerate while you prepare the filling.
     
  • Sprinkle with hemp seeds and freeze-dried raspberries or toppings of your choice and refrigerate for at least 1 hour to firm up.
    Cut into small squares, cubes or bars as you like.
    Stored in an air-tight container they will last for at least 1-2 weeks.
