Cosmic Brownie Protein Balls
Ingredients
- 1 cup soft dates, (if your dates are hard, soak 10 minutes in warm water and drain)
- 1 cup almond flour
- 2 tablspoons cacao powder or cocoa powder
- 1 scoop chocolate protein powder
- 2 tablespoons nut butter
- 1 teaspoon vanilla extract
- 2-3 tablespoons rainbow sprinkles
Optional Add-Ins
- Mini chocolate chips
Instructions
- Add dates to a food processor and blend until broken down.Add almond flour, cacao powder, protein powder, nut butter and vanilla extract.Blend until the mixture becomes sticky and fudgy.Gently fold in sprinkles by hand.Roll into 10 (more or less) bite-sized balls using your hands.Chill in the fridge for 20–30 minutes to firm up.Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
