Blueberry Protein Balls

Ingredients

  • 1 cup soft dates, if your dates are hard, soak in warm water for 10 minutes and drain
  • 1 cup almond flour
  • 1/2 cup freeze-dried blueberries
  • 1 scoop vanilla protein powder
  • 1 tablespoon nut butter (optional, for richness)
  • 1 teaspoon vanilla extract
  • Pinch sea salt

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Optional Coatings

  • Crushed freeze-dried blueberries
  • Shredded coconut
  • Chopped almonds 

Instructions

  • Add freeze-dried blueberries to a food processor and pulse into small pieces or powder.
    Add dates, almond flour, protein powder, nut butter (if using), vanilla, and salt.
    Blend until the mixture becomes sticky and holds together when pressed.
    Roll into 10-12 bite-sized balls using your hands.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the bars and after checking they are firm and set, remove from pan using the parchment paper handles and cut into 10-12 bars or pop out of molds.
    Working quickly, using two forks, dip one ball at a time into the bowl of melted chocolate until fully coated. Lift the ball from the bowl of chocolate and let any excess drip off, then place it onto a tray lined with baking paper. Repeat with the remaining balls.
    Place in the fridge for 20–30 minutes to firm up.
    Roll in other optional coatings if preferred.
    Store in an airtight container in the fridge for up to 1 week or freeze for up to 1 month.
