Cashew Protein Cups (No Bake, Chocolate Filled)
Ingredients
- 1 cup raw cashews, soaked 3+ hours and drained
- 1 cup soft dates (if hard, soak 30 minutes and drain)
- 1 scoop vanilla or unflavoured protein powder
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- Pinch of salt
Chocolate Filling
- 1/2 cup dark chocolate chips or chopped dark chocolate
- 1 teaspoon coconut oil
Instructions
- Add cashews to a food processor and blend until finely ground.Add the dates, protein powder, coconut oil, vanilla, and salt.Blend until the mixture forms a soft, slightly sticky dough. If too dry, add a teaspoon of water or extra coconut oil.Scoop the mixture and press into 8-10 silicone muffin cups or a lined tray, forming small cup shapes.Use your thumb or the back of a spoon to create an indent in the centre of each cup.
Chocolate Filling
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Spoon the melted chocolate into each indent.Place in the fridge for 1–2 hours, or until the chocolate is set.Store in the fridge for up to 1 week or freeze for up to 2 months.Optional VariationsAdd a spoon of peanut butter or almond butter under the chocolate layerSprinkle with sea salt for a salted chocolate finishUse white chocolate for a different flavour twist.
