Pineapple Coconut Chia Parfait
An easy to make healthy snack, this Pineapple Coconut Chia Parfait can be meal prepped ahead and topped with your favorite fruits, nuts or seeds.It is an easy, healthy breakfast for a super healthy start to the day, made with just five ingredients and very nutritious. It can also be served as a dessert or as a healthy afternoon meal for children.You have likely heard about the health benefits of chia seed - this amazing ancient superfood. Originally grown in Mexico, chia means “strength” in the Mayan language. In fact, those small seeds were referred as the “runners food”. Packed with energy-boosting power, the warriors would use chia as a fuel while running long distances and participating in battles. Chia seeds helped them stay hydrated and full of energy. In the past few years, chia has become one of the most popular superfoods in the health community. Rich in omega 3-fats, fiber, high-quality protein, vitamins and minerals, this magical superfood is a versatile ingredient to smoothies, salads, healthy desserts and snacks. And yummy chia pudding recipes of course! They really are a sunny explosion of nutrition in a tiny bright package!
Ingredients
- 1 cup coconut milk
- 1/4 cup chia seeds
- 1 teaspoon honey or maple syrup
- 1 teaspoon vanilla extract
- 1 cup pineapple fresh or frozen, pureed
Instructions
- Whisk together coconut milk, chia seeds, honey and vanilla extract in a medium sized bowl or container until combined. Cover and refrigerate overnight.
- Just before serving blend pineapple in a food processor and puree until a smoothie-like consistency is reached.To serve, divide chia pudding and pineapple mixture evenly in alternating layers. Top with shredded coconut or your favourite toppings.This recipe will make one large serving or two smaller ones.Store in the fridge in an air-tight container.
