Raspberry Coconut Cream Protein Bars

Raspberry Coconut Cream Protein Bars

If you love desserts that look indulgent, taste luxurious, and secretly nourish your body, these Raspberry Coconut Cream Protein Bars are about to become a new favourite. With a bottom layer of rich chocolate, and an top layer of creamy coconut and vibrant raspberry, this no-bake slice delivers bakery-style flavour while staying wholesome, protein-rich, and easy to make.

These slice bars are inspired by classic café desserts – think chocolate bases, creamy fillings, and fruity toppings – but reimagined with better-for-you ingredients. The result is a beautifully layered bar that feels decadent enough for dessert yet balanced enough for a nourishing snack. Every bite offers contrast: a firm chocolate crust and a smooth coconut cream and raspberry layer, that brightens the whole slice.

The base is a chocolate lover’s dream. Made from nuts, dates, cocoa, and naturally sweet ingredients, it creates a rich, brownie-like crust that holds its shape while remaining soft and satisfying. Adding protein powder to the base not only boosts nutrition but also helps create structure, making these bars easy to slice and serve. The chocolate layer anchors the entire dessert, providing depth and richness that pairs perfectly with the lighter layers above.

Next comes the coconut cream raspberry layer – smooth, silky, and lightly sweet. Coconut brings natural creaminess and a subtle tropical flavour, while protein powder turns this luscious layer into something far more satisfying than a traditional fruity cream filling.

Fresh or frozen raspberries add bold colour and a natural tartness that cuts through the richness of the chocolate and coconut. Blended into a smooth creamy fruity layer it brings freshness, and a beautiful pink hue that makes these bars as visually stunning as they are delicious. That sweet-tangy contrast is what keeps you coming back for another bite.

It’s the kind of layer that melts in your mouth and makes the bars feel indulgent without being heavy. A touch of vanilla ties everything together and enhances the dessert-like flavour.

One of the best things about this recipe is how practical it is. There is no baking involved, and everything comes together using a food processor or blender. Once layered, the slice sets in the fridge or freezer, making it perfect for meal prep. You can slice it into neat bars for grab-and-go snacks, serve it as a healthier dessert for guests, or keep it stashed in the freezer for when sweet cravings strike.

These Protein Bars are also incredibly versatile. You can adjust the sweetness, swap protein powders, or add extras like shredded coconut, chia seeds, or a drizzle of melted chocolate on top. Whether you are making them for family, friends, or just yourself, they are guaranteed to impress while still supporting your nutrition goals.

If you are craving something creamy, chocolatey, and fruity all at once, these layered protein slice bars deliver the best of all worlds. They prove that healthy desserts don’t have to be boring – and that sometimes, the most nourishing treats are the ones that feel like a little indulgence. 💥

  • 1 13.5 oz coconut cream, full fat (solid part only) *see note below
  • 1/2 cup vanilla protein powder
  • 2 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract

Instructions

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
Add all chocolate base ingredients to a food processor and blend until the mixture sticks together when pressed.
Press the chocolate base into the prepared tin and place in the fridge to set.

Raspberry Coconut Cream Layer

Chill in the fridge for at least 4 hours, or freeze for 1–2 hours until fully set.
