Chocolate Protein Fudge
Ingredients
- 1 cup coconut butter (softened) store bought or homemade recipe link below in notes
- 1/2 cup almond butter, peanut butter, or cashew butter
- 1/2 cup vanilla or chocolate protein powder
- 1/3 cup cocoa powder
- 1/3 cup maple syrup or honey
- 1 teaspoon vanilla extract
- Pinch of sea salt

Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.To soften (not melt) the coconut butter, place the jar in a bowl of hot water for a few minutes or give it a10-second burst in the microwave.In a mixing bowl, combine softened coconut butter and nut butter until smooth.Add cocoa powder, protein powder, maple syrup or honey, vanilla extract, and sea salt.Stir until a thick,smooth fudge mixture forms.Press the mixture evenly into the prepared pan.Sprinkle with toppings if desired.Refrigerate for 1–2 hours until firm.Slice into 16 or more small squares and enjoy.Store in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
