Berry Cheesecake Frozen Bark

Ingredients
- 2 cups cottage cheese, plain, regular, or low-fat
- 4 tablespoons milk of choice
- 2 tablespoons honey or maple syrup
- 1 tablespoon peanut (or any other nut or seed) butter
- 1 teaspoon vanilla extract
Topping
- 2 tablespoons almonds or any nuts, chopped
- 1 cup blueberries, strawberries, raspberries or a mix
Instructions
- First, select a baking sheet that fits the size of your freezer as you will need to pop it in there to freeze. Set it aside.Cover the baking sheet with parchment paper and lightly oil it with coconut oil or olive oil.
- In a food processor, add all the bark ingredients except the toppings: cottage cheese, milk, honey, peanut butter and vanilla extract.Process until smooth and creamy.
- Pour the cottage cheese mixture onto the baking sheet into a layer of about 1/2 inch or a bit more if you like it thicker.Sprinkle with the nuts and berries.Freeze for 2-3 hours or until firm.Remove the bark from the freezer and transfer it to a chopping board.Cut with a long sharp knife. You can warm the blade a little to cut it easily. Cut into 16 pieces.Store in an airtight container in the freezer for up to 1 month.
