Sunshine Orange Coconut Protein Nice Cream
Ingredients
- 3 ripe bananas, sliced and frozen
- 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 1/2 cup fresh orange juice
- 2 teaspoons orange zest
- 1 scoop vanilla protein powder
- 1 teaspoon vanilla extract
- 1-2 tablespoons almond milk (if needed for blending)
- Optional: 1 tbsp maple syrup or honey if you prefer extra sweetness
Instructions
- Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.Slice ripe bananas and freeze for at least 4 hours or overnight.Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.Add frozen bananas, orange juice, orange zest, hardened coconut cream, protein powder, and vanilla extract to a high-speed blender or food processor.Blend until smooth and creamy, stopping to scrape down sides as needed. Add almond milk gradually if required to assist blending.Adjust sweetness with maple syrup if desired.Enjoy immediately for soft-serve consistency, or freeze for 1–2 hours for a firmer texture.
