Peanut Butter Chocolate Chip Protein Bars
Ingredients
- 1 cup natural peanut butter
- 3/4 cup rolled oats
- 1/2 cup vanilla or chocolate protein powder
- 1/2 cup chocolate chips
- 1/3 cup honey or maple syrup
- 2 tablespoons milk of choice (as needed)
- 1 teaspoon vanilla extract
- Flaky salt for topping – optional
Instructions
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a medium bowl, mix peanut butter, protein powder, oats, honey or maple syrup and vanilla until well combined.Add milk one tablespoon at a time if needed to achieve a thick but pressable consistency.Fold in the chocolate chips. Sprinkle with flaky salt if desired.Press the mixture into the prepared pan in an even layer.Refrigerate for 1–2 hours, or until set.Slice into 8-10 bars and enjoy.Store bars in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
