Birthday Cake Protein Ice Cream (No Churn!)

The perfect treat when you want the delicious flavors of cake batter or birthday cake, but in ice cream! This recipe tastes great is super easy to make and has 21 grams of protein and best of all we don't have to use any pudding powder or any weird ingredients. Its smooth, rich, creamy and just as delicious (or even more so) as traditional ice cream.

Ingredients

  • 1 1/2 cups thick Greek-style yoghurt or blended cottage cheese
  • 1/4 cup vanilla protein powder
  • 2-3 tablespoons honey or maple syrup (to taste)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional but gives “birthday cake” flavour)
  • 2 tablespoons sprinkles (plus extra for topping)
  • 1-2 tablespoons milk, only if needed for blending

Instructions

  • In a food processor or blender, add the yoghurt (or cottage cheese), vanilla protein powder, honey, vanilla extract and almond extract. Blend until completely smooth and creamy.
    If the mixture is too thick to blend, add 1 tablespoon of milk at a time until smooth. Taste test and add more honey or vanilla if you think it needs it.
    Pour the mixture into a bowl and gently fold in the sprinkles so they don’t dissolve.
    Transfer the mixture to a freezer-safe container. Smooth the top and add extra sprinkles. Freeze for 2–3 hours, stirring once halfway through for a softer, creamier texture.
    Let the ice cream sit on the bench for 5 minutes to soften, then scoop and enjoy!
