Pomegranate Chocolate Protein Bites
Ingredients
- 2 1/2 cups pomegranate seeds
- 1 cup dark chocolate chips
- 1 tablespoon coconut oil
- 1 scoop protein or collagen peptides powder
- Flaky salt
Instructions
- Across 12 muffin cups lined with paper liners, sprinkle a single layer of pomegranate seeds. You can also use a silicon mold or even an ice cube tray.Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once melted add the protein powder and mix until well combined.Add the chocolate mixture to a piping bag or plastic bag. Snip off the end, so a small stream of chocolate can come out. Pipe a crisscross pattern of chocolate across the pomegranate seeds. Add another layer of pomegranate seeds, then more chocolate, and then the last layer of pomegranate seeds. Finish with a pinch of flaky salt on each of the pomegranate chocolate bites.Refrigerate for at least one hour before serving. After removing from the fridge, serve immediately.Store in fridge for up to1 week or freezer for up to 3 months.
