Have you ever taken a bite of a dessert and from the very first taste were like, “Omg. That is GOOD.” “So good I probably shouldn’t be eating it.”

Indulgent taste. Melt in your mouth goodness.

This fudge feels like it’s totally sinful. Silky. Creamy. Smoooooth. But guess what! It’s HEALTHY.

This Coconut Butter Protein Fudge is my newest obsession. And once you try it, you will see why! It has ONE special ingredient that is so insanely unique and delicious. I wanna drizzle it on everything.

What is it?? COCONUT BUTTER. This is a GAME CHANGER. I absolutely love experimenting with creative ways to make fudge *without* using ANY dairy or ANY sugar.

If you are new to coconut butter, it’s probably confusing. No, it’s not like “real” butter. It’s more like almond butter, but made with blended coconut instead of blended almonds. It’s naturally mildly sweet (but there’s no sugar added.) In short, it’s MAGIC. 😉

This is a big one – it *doesn’t* taste like coconut. Seriously! It has almost a shortbread flavor. And not like any nut butter you have ever had before. Because it naturally contains coconut *oil*, it hardens when chilled. It’s so amazing and versatile, it can transform into this healthy fudge and so many other tasty treats like cake balls, cream pies, candy, frosting, OH MY.

As a long term fitness professional who is immersed in the health and wellness field, it’s fun to keep tabs on the latest trends. Traditionally, many trends over the last decade or more have (unfortunately) revolved around elimination diets in which certain foods or food groups are restricted or eliminated entirely. Think grains, dairy, carbs, fats, meat and so on.

In their place came foods marketed as low-calorie, low-fat, low-this, low-that were usually interpreted by novice consumers to mean “healthy”, right? However, we are now finally starting to see a paradigm shift. People are beginning to change their mindset around food and paying closer attention to not only the nutrition label, but also the ingredients.

Consumers are becoming more interested in ADDING more nutritious ingredients to their diet, as opposed to eliminating foods or entire food groups. What perhaps is even more exciting is that fat is no longer demonized. Items like coconut oil, avocado oil, and nut butters and flours are being used more widely for their nutritional benefits with less emphasis on their caloric value.

This berries and cream fudge recipe is the perfect treat if you love coconut like I do.  I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut is available. It now comes in a variety of forms from water to milk, cream, butter, oil, flour and shredded allowing for a variety of creative ways to add coconut to a healthy diet. Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or “good” cholesterol levels, which lowers overall heart disease risk.

As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess body fat needs to be lost. Just one scoop of coconut oil delivers a wide-range of healing properties. Produced in its most natural state, coconut oil will benefit you, your children and your pets. I put some into my dogs dinner regularly.

How to customize your fudge:

Strawberries is a personal favorite combo, but you can sub any other type of berry or topping or mix-in that you like! Blueberries + lime zest, raspberries + lemon essential oil. Or take it more sweet and salty! Swirl in some caramel, peanut butter, chopped nuts, or a drizzle of chocolate on top! YUM. The possibilities are endless!

I’m so glad fat is BACK. It’s what makes food taste so dang good! haha. I love healthy fats like coconut butter for a majorly SATISFYING treat. With zero added sugar and super low carbs, you can feel GOOD about this healthy indulgence!

Coconut Butter Protein Fudge With Berries

Ingredients

  • 1/2 cup coconut butter, store bought or recipe below in notes
  • 1/4 cup any milk
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 2-3 teaspoons honey or maple syrup – to taste
  • 1 teaspoon vanilla extract
  • 1/2 cup berries - sliced

Instructions

  • If you are going to make your own homemade coconut butter, make it first so its ready when you wish to make the fudge (recipe below in notes).
    Line an 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting. Or you can use a candy mold or even an ice cube tray.
    Melt the coconut butter by placing the jar in a bowl of hot water.
    *Important* Stir to incorporate oil that separates.
    Pour coconut butter into a small glass measuring cup. Stir in honey, milk and vanilla. Sweeten to taste (mixture will thicken).
    Transfer mixture to loaf pan and spread out smooth with a spatula or the back of a spoon. Cover fudge with berries or berry slices and press them in gently.
    Chill for about 30 minutes until firm. Slice into pieces or small squares.
